What kind of tofu is better for Mapo Tofu?

Mapo Tofu is a very common dish. The main ingredient is tofu, the simplest one, but it still takes a lot of effort to make it well. I have brought you a home-cooked recipe for Mapo Tofu.

Ingredients

500g tofu (soft tofu), 50g pork, green garlic, minced garlic, minced ginger, pepper, red pepper, cooking wine, oil and salt, water starch, bean paste, black bean paste , white sugar

Method

1. Cut the tofu into small pieces, add water and put it in a pot to boil.

2. After the water boils, add half a spoonful of salt.

3. Pour the water starch inside.

4. Then bring the tofu with water and pour it into a large bowl for later use.

5. Prepare another pot, pour in an appropriate amount of oil and heat it, then add Sichuan peppercorns and red tips. Sauté the pepper until fragrant.

6. In this way, the peppercorn chili oil is ready, and then take out the peppercorns and chili peppers.

7. Cut the pork into small cubes, add 1 spoonful of cooking wine and mix well.

8. Then pour it into the oil pan just now and use chopsticks to spread it.

9. After the meat turns white, add a spoonful of black bean paste and a spoonful of bean paste.

10. After stir-frying the red oil, add the minced ginger and garlic and stir-fry until fragrant.

11. Then pour 1 bowl of water into it and bring to a boil.

12. Then drain the previously cooked tofu and pour it into the pot. Cover and simmer for about 6 minutes.

13. After cooking, add 1 teaspoon of sugar to enhance the flavor.

14. Add the water starch into it again

15. Finally, take it out and sprinkle with minced green garlic and crushed Sichuan peppercorns and it’s done.
