Zhangjiagang history and specialty

Swordfish noodles and Swordfish wonton are famous for their unique flavor. Swordfish is one of the main aquatic products in Zhangjiagang, which can be caught in the Yangtze River. In the early days, saury was male, big and fat; In the later stage, most females are smaller and have little fat. After the Qingming Festival, the fish of Dao became old, commonly known as "Lao Dao". Swordfish wonton is a traditional snack in Zhangjiagang. The preparation method comprises cutting saury in half from the tail, removing head, skin and big bones, mashing with the back of knife, removing fishbone, adding seasoning, and mixing with leek or lean pork to make pits; Then select refined white flour, add proper amount of salt and water, knead it into noodles, roll it into extremely thin skin, and wrap saury into wonton. Puffer: It was called "mackerel" in ancient times, and it is also called "Three Freshness of the Yangtze River" with shad and swordfish. The puffer fish has an oval body, a small round mouth, a dark brown back, a pattern, a white abdomen, thorns, no scales, no gallbladder, and an airbag, which can be inflated by inhalation. Found in the waters where salt water and fresh water meet, they lay eggs upstream along the river every spring. Zhangjiagang catches puffer fish early and has a high yield. The puffer fish is rich in nutrition, fat and delicious, and has game, which is different from others. Ming Dow magazine in Song Dynasty once praised it as "the strange smell in aquatic animals". The puffer fish also has the effects of tonifying deficiency and eliminating dampness, harmonizing stomach and eliminating hemorrhoids. However, blood, liver and ovary are highly toxic, and it is easy to be poisoned to death with a little carelessness. After liberation, the people's government banned private trading and it was controlled by the state. After treatment, puffer fish can be made into frozen fillets or canned fish, and valuable drugs such as tetrodotoxin and tetrodotoxin can also be extracted from liver and ovary.
Whitebait: also known as "noodle fish" and "noodle fish", it is slender, silvery white, transparent and smooth. Generally, it is 8 ~ 15cm long and looks like Hosta. Carp: (Carp), also known as "Jiangtuan" and "Baiji", is a freshwater bottom fish in the Yangtze River. Zhangjiagang River is fished all year round, with high yield in spring and summer. Fish is tender and delicious, especially when cauliflower is in full bloom. "Steamed fish" is a folk specialty in China. Fenghuang Rice: It is an excellent japonica rice cultivated near Fenghuang Mountain in Zhangjiagang for a long time. Its grain base has two wings (protecting glume), which looks like a phoenix spreading its wings, hence the name Phoenix Rice. In Qing dynasty, Chang Zhao He system was listed as a famous product. Phoenix Peach: The scenic Phoenix Mountain and the foothills of Eshan Mountain in Zhangjiagang City are the main producing areas of the famous Phoenix Peach. Phoenix peach is an excellent variety introduced from Wuxi by 1952 and bred after a long time. The skin color is light yellow, milky white and reddish, with the characteristics of large fruit, tender meat, fresh and sweet, juicy and easy peeling. Tuoluobing is a famous traditional snack in Yang She and Tangqiao of Zhangjiagang City. Cake has a long history, more than 150 years. The manufacturing process is unique. The rooster is tall and strong, standing proudly, weighing more than 4 kilograms, and is known as the "king of nine pounds". The hen's feet are thick and short, muddy and solid, weighing more than 2 kilograms. The annual egg production is between 140~200, and the average egg weight is 54 grams. Chicken meat is tender, delicious and rich in flavor. According to folklore, Weng Shu Tong, the mentor of Emperor Guangxu and Tongzhi of the Qing Dynasty, often brought Luyuan chicken as a specialty to Beijing for friends, relatives and colleagues. It has been listed as a tribute and is well-known in the north and south of the country.
Gao Feng Luye Tea: produced in the village head mountain of Gao Feng, Jingang Town, Zhangjiagang City. Changshan Mountain is located near the Yangtze River, with dense fog, fresh air and humid climate. This is the location of Gao Feng Village Tea Farm in Jingang Town. The produced tea has natural aroma and clear color. Gao Feng tea is picked in spring and autumn, preferably before Grain Rain. There is a tea factory in the village that bakes itself.
