Hotel vinegar is generally aged, not entirely brewed from grain. Some also added special medicinal materials such as garlic or flavored foods. This special kind of vinegar is not the same as that bought in peacetime, and it is mostly placed in jars. Many local people brew their own vinegar, which is much better than that sold in the market.
