The Origin History of Lotus Blood Duck

Blood ducks are called ducklings in the local area, which are used for offering sacrifices, entertaining guests and keeping regular dishes in summer and autumn. According to different seasons, regions and materials, it can be divided into lotus duck, earthworm duck, autumn duck, Longxi wine duck and Shangxi salted duck. Duck meat is cool, and it is best in summer and autumn.

Peng Ji, a native of Jizhou in the Southern Tang Dynasty, attached himself to Ma Yin and retreated to Hunan from Lianhua. Later generations became Xiangxi Tusi, occupying Xiangxi for hundreds of years, moving into caste and multiplying into a big family. His farming customs are integrated with the local area, and today there are blood ducks in Xiangxi.

In the late Ming Dynasty and early Qing Dynasty, Lotus Fanjia opened a duck-incubating shop in Xiangtan, Hunan Province. Lotus Baima, Maojia and others stole skills in Xiangtan, and the duck-incubating skills returned to the suburbs of the county, so Lotus had three duck-incubating shops.

At the end of Qing Dynasty, Zhu Yijun was in charge of Xiangxi. He was appointed as the military commander of Yongjing, Chen Yuan, and lived in the Phoenix Hall. He used to be the ambassador and governor of Hunan. On the Dragon Boat Festival in Phoenix, ducks were thrown into the river by the garrison road, and the whole city went down to catch ducks in order to have fun with the people. Its habit continues to this day.

At the end of the Qing Dynasty, Emperor Zhu Yifan dedicated this dish to the Qing court, and it was on the court menu from then on.

When he looked carefully, he saw that the food was mushy and purple, and it tasted more delicious than usual. Liu Delin was overjoyed and said to himself, "Today is the first time to fry such a delicious dish." When the dish was served, Premier Wen tasted it and was full of praise. He asked, "Why this dish?" Liu Delin thought for a moment and replied, "Just call it a blood duck." Premier Wen stood up and said solemnly, "Today, heroes from all walks of life gather together to discuss the great cause of benefiting the country. We drank blood wine, ate blood duck and vowed to fight the enemy to the end! " The big earthquake shook. That was the day when we set out to recover Yongxin and other counties. At that time, it was huge and famous.

Since then, "Lotus Blood Duck" has been famous all over the world and passed down from generation to generation. Later, thanks to Zhu Yifan, the teacher of the last emperor Puyi, "Lotus Blood Duck" became the royal menu of the court in the late Qing Dynasty. As a result, "Furong Blood Duck" became famous for a while, and everyone knew it! During the Lushan Meeting, it was praised as a special dish by Mao Zedong.

One summer in 1950s, a mysterious phone call was made to Lianhua County, and a chef named Li Guifa was asked to go to Nanchang to take some ducklings to fry the famous lotus dish-blood duck for the old comrades in Jinggangshan. Who is this old comrade? Mao Zedong, He Zizhen and Ceng Zhi. It is said that because Mao Zedong ate this dish during the Great Revolution, he never forgot it, so when he visited Nanchang after the founding of the People's Republic of China, he specially sent someone to invite a chef from Lotus to cook this Tao Ren blood duck.

Not only Mao Zedong, but also the Lotus people are fascinated by this dish. In July and August of the lunar calendar, there are many sacrificial festivals in the countryside. You can't eat this kind of duck in a foreign land. It relies on the crispy duck grown in Lianhua Mountain, the tea oil produced in Lianhua Mountain, the mellow water wine brewed in Lianhua Mountain, the natural cool well water in Lianhua Mountain and the frying technology of the old folks in Lotus Garden. ...

When eating, the duck is fat but not greasy, with thin skin and fragrant meat. Even the bones can be eaten together, and the taste is really unique. It is also said that after the Han people in Jiangxi invented the practice of fried blood ducks, with the "Huguang in Jiangxi" in the history of China immigrants (Huguang here refers to Hunan and Hubei in the Qing Dynasty, but before that it was the general name of Jinghu South Road, Jinghu North Road and Guangnan West Road), fried blood ducks spread to Yongzhou, Quanzhou, Ningyuan and other places in Hunan, so there were Yongzhou Blood Duck, Quanzhou Blood Duck and Ningyuan Blood Duck.
