How to cook tripe quickly

First use a pressure cooker to press it for a period of time, and then use a pot to cook it.

1. Tripe must be cooked before cooking. Add the onion, ginger, cooking wine to the whole tripe and cook over medium-low heat for 30 minutes. This will remove the fishy smell of tripe. After cooking, rinse in cold water, remove excess fat and cut into strips.

2. Peel and cut the white radish into cubes.

3. Prepare onions, ginger, garlic, star anise, cinnamon, bay leaves, and peppercorns.

4. Prepare tempeh, tomato sauce, Pixian bean paste, and Zhuhou sauce.

5. Sauté onion, ginger, garlic and spices until fragrant.

6. Add tomato sauce, Pixian bean paste, Zhuhou sauce, and tempeh.

7. Fry until fragrant and make red oil.

8. Add tripe.

9. Add Huadiao wine and stir-fry slightly.

10. Stir-fry over medium heat until fragrant.

11. Pour in water until it is less than the height of the tripe.

12. Add rock sugar.

13. Bring to boil.

14. Close the lid.

15. Turn to low heat and simmer for 2 hours.

16. When the time is up, add the white radish and cook for another 30 minutes.

17. After cooking, test the taste and add salt to taste if it is not salty enough.
