There are three treasures in Anhui cuisine: Dongjiang brine chicken, stuffed tofu and braised pork with plum. In particular, braised pork with plum vegetables is quite famous at home and abroad. In fact, this is a masterpiece of Dongjiang Hakka in food culture.

Dongjiang brine chicken

The name of a dish in Huizhou. "Dongjiang salted chicken" is a famous dish in Guangdong. Originated in Dongjiang, Guangdong. More than 300 years ago, in some salt fields along the Dongjiang River, cooked chickens were wrapped in gauze paper and preserved in salt piles. This kind of chicken is delicious and unique in flavor. Later, the salt industry in the capital of Dongjiang was developed, and local restaurants competed for the best dishes in order to entertain guests, so they created a method of roasting chicken with hot salt, so this dish began to spread in Dongjiang Yu, so they called this chicken "Dongjiang Salt Roasted Chicken"

Yongtoufu

Stuffed tofu is a traditional dish for Hakka people to entertain relatives and friends on holidays. Fresh tofu, lean pork, a small amount of salted fish or eggs are used as raw materials. Boneless salted fish, fried incense, chopped pork, embedded tofu blocks, or steamed with slow fire can all be eaten, and some are cooked in a pot until they are half red, which is called braised tofu and has Hakka flavor.

During the Northern Song Dynasty, when Su Dongpo lived in Huizhou, he specially sent two famous chefs to Hangzhou West Lake to learn cooking. After the two chefs returned to Huizhou, Su Dongpo asked them to imitate the Dongpo braised pork in Hangzhou West Lake and make it "braised pork with plum vegetables". It's really delicious, refreshing and not greasy, and it's well received by Huizhou citizens. It once became a delicious dish at Huizhou banquet.

Huizhou has many famous specialties, such as bamboo shoots and honey in Longmen Xixi; Boluo Crispy Sugar, Ma Bei Meatballs, Luofushan Crispy Fermented Vegetables, Vanilla Oil, Shiba Inu Sanhuang Chicken; Huidong Tieyong offered oysters, and Gao Tan Ming Jiang; Huiyang Danshui pear, Zhenlong litchi and so on.

Huizhou Hakka culture not only has the traditions of Meizhou, Gannan and western Fujian, but also is good at absorbing the essence of Guangfu and southern Fujian cultures and forming a unique style. Huizhou folk songs, for example, originated in Meizhou, but influenced by local indigenous songs, the tunes are not as mellow and soft as Meizhou folk songs, but high-pitched and bold. Dongjiang cuisine is also unique, different from Meizhou cuisine.
