How to make Roujiamo
Ingredients
Four, yeast, sharp (green) pepper, coriander, braised pork (see braised pork recipe)
Method
1. Melt the yeast, mix the flour and knead the dough. Once it has doubled in size, take it out, knead it back to its original shape, and knead for three more minutes.
2. When the braised pork is done, do not let the juice collect.
3. Divide the dough into balls of suitable size, knead each ball 20 times, flatten and roll into small cakes, which will be a little thick.
4. In a frying pan, bake over low heat without adding oil. Set one side slightly to shape, turn over to the other side, and cook over low heat. Wait until the dough is swollen and slightly cracked.
5. Chop the meat, green pepper and coriander; take a cake, cut it open with a clean knife, stuff it with green pepper and minced meat, and pour some braised broth.
