Later, new technologies such as rosin extraction and blowtorch burning were adopted, and cinnamon, dried tangerine peel and clove were added to the original seasoning. Baijia pancake

Over the years, around Xiaoman, they fished for fish and shrimp near Erjiegou. Because this area is the place where the floodplain, the sea and the river meet, the black shrimp (commonly known as hemp thread) produced here is thin in skin and thick in meat, fat and tender, with rich taste and no fishy smell. All the fish and shrimp he brought back are sold in Jinzhou. Sometimes there will be some shrimp left in the jar, so add some salt for fear of deterioration. Over time, the shrimp in the jar accumulated more and more, and naturally fermented into sticky shrimp paste in the sun. Scoop a little for each meal and give it to the neighbors to taste. Everyone who eats praises the delicious taste. After careful management, adding sun and stirring, the taste is more delicious, so it is named marinated shrimp sauce. Later, he found a layer of oil floating on it, which was more delicious than shrimp sauce. In order to get more shrimp oil, he put the oil on it with a spoon and replaced it with a cage with chopsticks in the shrimp sauce. After a while, the cage was filled with fresh shrimp oil. If there is too much oil, pickle vegetables with oil. Pickle some cucumber strips and celery at first, and then replace them with whole cucumbers. After pickling, the flowers can't drop and the thorns can't drop, so it is more crisp and tender. Gradually, fresh and tender cowpeas and peppers are soaked in oil. After a few days, they taste the same as shrimp oil and the color remains unchanged, so "shrimp oil side dishes" came into being. Later, I began to eat at home and sell it in the market. It was very popular and sold better every day. When our own cucumbers are not enough, we go to the nearby village to buy them, and the business is getting bigger and bigger. Li's "shrimp rape" gradually spread in Haikou area. In the middle of Tongzhi, Li's descendants opened a workshop specializing in shrimp and rape in Jinzhou City. In order to maintain the established reputation, the raw materials of the four side dishes should be carefully selected. Cucumber, several inches long, must be crowned with thorns; Celery, suitable for autumn, green and hollow; Oil pepper, with "millstone pepper" as the best, is thick and flat, and can be held in the palm without deformation; Cowpea is crisp and thin. The curing method varies from thing to thing, which not only keeps the freshness, but also keeps the original flavor. Since then, "shrimp rape" has been dubbed "Jinzhou cuisine". Due to the delicious color of Jinzhou side dishes, they are gradually recognized by people and become a good accompaniment in winter. Once, Jinzhou dishes were famous.
