1. Lianshui dried radish

Mainly distributed in towns and villages such as Shihu, Nanji, Xuji, Huangying and Yixing in Lianshui County. Lianshui County is named after the Lian River. According to the Records of Huai 'an Prefecture in Qianlong, in the fifth year of Shaoxi in Song Guangzong (1 194), the Yellow River decided to flood the old dike in Wu Yang, while the Liangshan River was injected eastward, and it was divided into two factions, one from the North Qinghe River and the other from the South Qinghe River. The county seat belongs to the alluvial plain of the Yellow River, and the terrain is inclined from southwest to northeast. Low-lying areas gradually formed the unique sea salt heavy saline-alkali land in Lianshui. The soil salt content is above 7‰, and the PH value is above 10. Radish growing in this soil is small and thin, with little moisture and purple skin, also called "dark purple". Although this radish is not a top-grade raw food, it is a treasure after being dried. Lianshui dried radish is rich in minerals and trace elements. Each 100g contains 0.7 mg ~ 1 mg of iron, 5 1 mg ~ 55 mg of calcium, 0.22 mg ~ 0.5 mg of zinc, 0. 19 mg ~ 0.33 mg of molybdenum, and also contains carotene, vitamins and nicotinic acid. Lianshui dried radish is a famous specialty, which is recorded in the annals of Anton County and the products published in the first year of Guangxu. When pickling dried radish, medium and small "cold heads" were selected, with a length of 8 cm ~ 10 cm and a diameter of 2 cm ~ 4 cm.

2. Lianshui lotus root

Mainly distributed in Liancheng, Xuji, Nanji and other towns in Lianshui County. Lianshui used to be the estuary of the ancient Huaihe River, and it was also the estuary after the Yellow River captured the Huaihe River. The upstream sediment is deposited here, forming a plain and water network. The proportion of river sand in soil is high, and there are many trace elements such as calcium, iron and potassium. It is a kind of eutrophic fine sand, which is very suitable for the growth of lotus root. Lianshui lotus root is mainly shallow water lotus, with thick roots, tender meat, crisp and sweet, white and flawless, and good nutrition and efficacy. Because it grows in sandy soil, it is less constrained by soil. Lotus roots grow evenly, and the head size is moderate, generally 4-5 knots, 60 cm-90 cm long, and each knot is15 cm-30 cm. The head and tail are smaller and thinner, and the middle knot is thick and white, which is most suitable for eating. There are 4 ~ 5 holes in the head and tail section and 7 ~ 1 1 hole in the middle section. The joints between nodes are smooth and clean, and there is basically no black beard, which is a good product in lotus root.
