Working in a five-star hotel, especially a hotel like Sheraton, can you speak English? Do waiters communicate in English when they work?

I have worked in Sheraton Shenzhen, but I don't need it. I use it most often in interviews. Usually foreigners speak English within your work scope, which is easy to handle. The waiter is nothing more than a few words, unless you are looking for the general manager, because most five-star hotel owners are foreigners. Isn't it funny that you speak English with people in China? My feeling as a hotel is demanding, earning less and being depressed.
