Tea fragrance types of six tea families

First, green tea

Tender fragrance: There are obvious differences in the aroma of tea made from tender raw materials and old raw materials. The more tender the tea, the more tender the aroma.

Millicent aroma: A unique aroma produced by rich tea hairs, especially in green tea with millicent, such as Biluochun.

Bouquet: fresh and elegant fragrance, smells fresh and pure. Most green tea can be described by fragrance.

Chestnut fragrance: the aroma similar to fried chestnuts produced in the process of frying green tea is also described as fried bean fragrance, such as Longjing tea.

Baking aroma: the fire aroma similar to baked food produced by baking green tea, such as melon slices.

Orchid fragrance: high-grade green tea will have an orchid-like fragrance, which is very elegant, such as the top West Lake Longjing.

Second, white tea.

Tender fragrance: the raw materials are fresh and tender, fragrant, and a little similar to the taste of green tea. For example, tea with white needles and silver needles has a special fragrance.

Haosen fragrance: Many teas have a special Haosen fragrance. Generally speaking, the more tender the raw materials, the more fragrant the tea. The fragrance of white silver needle is more obvious than that of Bai Mudan, and the longevity eyebrow has almost no fragrance.

Jujube fragrance/medicinal fragrance: the strong fragrance formed after white tea in Chen Huacheng is similar to the aged fragrance of red dates, traditional Chinese medicine and old wood.

Sunlight fragrance: White tea absorbs sunlight to form a smell, which is indescribable and can be smelled in dried white tea. White tea is slightly fermented tea, which will be slightly old and tender.

Aroma of flowers and fruits: Aroma of flowers and fruits is just a general term. Aroma of flowers and fruits of white tea is different from that of black tea and oolong tea.

Third, oolong tea.

Floral fragrance: It exists in less fermented oolong tea. For example, Tieguanyin with fragrance has orchid fragrance, and dancong tea has osmanthus fragrance and ginger fragrance.

Fruit fragrance: Tieguanyin, Alpine Camellia, Shan Cong and Rock Tea with moderate fermentation all have ripe fruit fragrance.

Honey fragrance: Oolong tea with high degree of fermentation will have honey fragrance similar to black tea, such as Oriental Beauty.

Fire flavor: the baking flavor and charcoal flavor formed by moderate baking, such as foot fire dahongpao, will be scorched and bitter if baked excessively.

Caramel fragrance: After moderate baking, tea leaves will have obvious caramel fragrance, which generally appears at the bottom of the cup and the lid of the pot.

Milk fragrance: Tea made from some tea varieties will have milk fragrance, such as Jin Xuan and some Dan Cong.

Fragrance of rock bones and flowers: this is the unique taste of Wuyishan rock tea, with complex and rich aroma, named after the slightly spicy cinnamon aroma.

Fourth, black tea.

Flower fragrance: Black tea with little fermentation has a fresh flower fragrance, which is clear and elegant. For example, Hong Ying No.9 has obvious floral fragrance.

Fruit fragrance: Sweet fragrance similar to fruit flavor, such as Qi Hong, which is slightly stronger than floral fragrance.

Honey fragrance: A sweet fragrance similar to honey, which is commonly found in black tea, especially Yunnan red.

Pine smoke fragrance: rosin produced by pine smoke, such as Zhengshan species, is named after its aroma resembles baked sweet potato.

Sweet potato fragrance: The high temperature of baking destroys the sugar and amino acids in tea, making the sweet fragrance of black tea more prominent, thus giving it caramel fragrance and baked sweet potato-like fragrance.

V. Black tea

Mature aroma: the rich aroma formed by the unique heap fermentation process will become more and more obvious after long-term storage.

Radix Aucklandiae: Black tea has a woody smell because of its long age.

Mushroom aroma: the unique aroma of black tea with "golden flower", such as Liubao tea.

Six, yellow tea

Crispy rice and tender corn: Typical tea leaves are Junshan Yinzhen, Huoshan Huangya and Mengding Huangya.
