Production steps:

First, melt the white sugar with hot water, put the glutinous rice flour into a basin, then pour the sugar water into the glutinous rice flour, stir it evenly with chopsticks, rub it into a slightly hard glutinous rice dough by hand, and then cover it with plastic wrap and let it stand for 10 minute;

Next, divide the bean paste stuffing into small portions, take out the glutinous rice dough and divide it into small portions, press a concave hole in the middle to completely wrap the bean paste stuffing, knead it into balls, then knead it into a ball again, just like wrapping jiaozi, wrap the stuffing in each hemp ball, and then roll sesame seeds one by one;

Put more oil in the pan and get ready to fry. When the oil cools, you can put the hemp balls in the pot. When the oil temperature is about 3 layers hot, turn down the heat and keep this temperature until the hemp balls begin to float in the pot, turn them over gently and press them into the oil with a colander.

Deep-fry until the sesame balls are completely expanded and golden yellow, and there is a hollow "bang" sound when turning and colliding, then turn off the fire, take out the sesame balls, drain the oil and put them on the plate.

If you want to make the hemp ball bulge, you need to pay attention to the following points:

(1) Novices had better cool the oil pan, at least at the beginning, the oil temperature should not be too high, otherwise the curing speed of the outer layer will become particularly fast, and the swollen hemp balls inside will be easily broken after shaping. Therefore, the oil temperature around 90 degrees is basically enough. Judging from this, the oil surface is smokeless and silent, and there are a little bubbles around the hemp balls in the pot. When the hemp balls begin to float and become Huang Shi, the temperature can be appropriately increased to improve the efficiency, and the oil temperature can also be kept low and the fire can be slowly fried.

Secondly, after the hemp ball is fried, it begins to float, and it is necessary to turn over and press the oil return with tools such as colander and shovel from time to time, which is a key to the bulging of the hemp ball. Because after they float, the temperature of the part above the oil surface will decrease. If you can't rotate and press them frequently, the hemp balls will be heated unevenly, and the result will be either strange shape or no expansion because of the continuous loss of heat, so don't be lazy. Press and turn them over from time to time.

(3) If the fried hemp ball does not shrink or collapse, it is suggested that novices fry it with a small fire when trying it, until the surface is golden and slightly reddish, so that the outer layer will be completely crisp. When kneading dough, the degree of water absorption may be different because of the difference of glutinous rice flour. This fine proportion of water and flour may need to be adjusted again, but the dough should not be too soft as far as possible, otherwise the fried hemp balls will be soft and easy to collapse.

In addition to the above skills, there is another way to help the hemp ball expand without collapsing, that is, adding a little baking powder in moderation. During frying, the chemical reaction of baking powder will occur at high speed. This change will produce a lot of gas, which will make the hemp ball fully expand. The principle is similar to that of fritters.
