Potatoes and Weining people

Potato, the scientific name of potato, is also called potato. Because it grows in the soil, people in China call it potato, and the word potato is basically exclusive to Weining people. In Guizhou, few people call potatoes or potatoes. Generally called potato, red potato, white potato, Milla potato and black potato. . . . . .

Its appearance resembles taro, which is native to China, while potato is imported from abroad, so it is called potato figuratively.

We used to call foreigners foreigners and add foreign characters to all imported goods. This name, Fa Weining, has been used ever since. Such as matches, nails, shovels, persimmons, pickaxes, foreign wine, guns and dresses. . . . . . These are all things, as well as foreign flavor in thought (avant-garde dress) and so on. Foreign goods, foreigners and foreign languages exist in a lot of daily conversations, while potatoes have completed the exclusive process of coming to real estate from berths. Other foreign goods have been replaced by proper nouns, and only potatoes are deeply rooted in people's hearts and localized.

In Weining, because the altitude is about 2 100 meters, there is plenty of sunshine all the year round, which is very suitable for potato growth. For hundreds of years, potato has been the most important food source, and its output is higher than buckwheat and corn. In the era of food shortage, potatoes were planted in large quantities because they were easy to store and eat. After the autumn harvest, pile a pile in the shade of the earth building and cover it with pine leaves (needles). If you have enough, you can eat it all year next year. After winter, potatoes will have wonderful changes. It is covered with wrinkles, soft and no longer hard. Some or all of the potatoes have turned blue, roasted thoroughly with firewood ash, a little sweet and the taste is indescribable. Great! It has a proper term "black-hearted potato". Children and even adults especially like to eat this kind of potato. Unfortunately, there was a shortage of food at that time, and only a few families had this kind of black-hearted potato after the New Year.

Although there are many ways to eat now, people are already well-off. Because of the change of living environment, this kind of potato can't be found. Who still burns firewood all the year round? Whose new house has a darkroom?

This kind of black-hearted potato must meet three conditions:

You can't grind gas, otherwise small potatoes will grow in the potatoes that don't germinate well and you can't eat them.

Second, we must ensure that it is absolutely dry and smells of firewood all the year round, and it cannot be smoked like bacon. Let potatoes gradually change in the popularity of fireworks.

Third, we must ensure absolute darkness indoors, otherwise potatoes will turn green, not only not sweet, but as numb as peppers.

With the arrival of a well-off society, every family has built a small building, all using gas, and there is no environment!

All kinds of potatoes have different ways to eat. As a vegetable, China people are nothing more than steaming, frying, boiling and frying, especially frying shredded potatoes, which is definitely a national dish. You can see it in restaurants and hotels all over the country. It is definitely the highest daily sales.

In Weining, Guizhou, people's favorite food is not frying, but burning or roasting. Weining people only say that they burn when they are hot. Whenever I meet friends, I always invite them to say, "Come to my house to cook potatoes." Look, how important it is. Killing chickens, cooking bacon and drinking alcohol are inevitable, but the original reason is to burn potatoes. This may have a lot to do with the local Yi people. The Yi people love wine, meat and guests more. Potatoes are the soul of the Yi people, and they are also integrated into the blood of other local ethnic groups. Weining people must eat two baked potatoes every day, or a day will be as boring as not eating them. No matter how good the meal is, it is wrong not to eat baked potatoes. Fortunately, it's convenient now. There are baked potatoes in all the streets. Buy two before eating and dip them in special Chili powder.

Weining people who live in other places will burn potatoes every chance they get. It's not convenient to make a fire now. I'll bake it in the microwave. In a word, eating potatoes every day is a big deal. People all over the country have wronged potato eggs from Gansu, and Weining, Guizhou, is the real potato egg. No one has counted the potatoes sold in Guizhou every day, but they are definitely the highest in the country. There are many ways to eat, fine classification and wide taste, which is probably the best in the world. Let's talk about various ways to eat:

First, burn and eat: because the varieties are different and the temperature of burning is different, it should be subdivided.

Dried sweet potato: It is shaped like a kidney and its skin is red. It is the potato with the highest starch content, so when burning it, you should avoid open flames, suffocate it with firewood ash, peel it and pinch it gently, and it will spread. It is full of white starch crystals, which are soft and sticky in the mouth, but not sticky to the teeth.

? White potato: It's the pretty girl in the potato. The skin is white and the meat is white, and it has a clear fragrance after cooking. Starch content is second only to dried sweet potatoes. No matter how it is cooked, it is suitable for eating. One is as stuffy as dried sweet potatoes, but its face is not greasy. Because of its own fragrance, it tastes excellent. The other is to burn it eight times, knock it off with branches, and scrape the hard shell yellow. If you open it, you can see the crystal, but a small part of the central part is completely raw. This time, it tastes the best. However, due to low yield, white potatoes have disappeared and been eliminated.

Milla potato: The skin and meat are yellow, which is big and has high yield. This variety is on the market now. Suitable for roasting on charcoal fire. When roasting, rub the corn bones (with burnt corn cobs) and turn them over until they are fully cooked, but they should not be roasted too thoroughly, otherwise the taste will be bad. Make sure it's cooked well and the center is crisp.

Black potato: red skin with purple irregular rings in the white heart. This kind of potato has a high yield, but it tastes bad. No matter how you cook it, it is not delicious, and the starch content is low, so it is not very popular. Because of its own color, except for a few restaurants that make mashed potatoes, it basically withdrew from the market.

Second, cook and eat.

This way of eating is rare. Basically, they are cooked and fed to pigs, and the potatoes have been classified when they are dug. Those who seed, sell seeds, eat by themselves and feed pigs are all classified. Those who are bad and those who are broken should be fed to pigs. Only when they are cooked and stuffed, if they find potatoes with excellent starch, they can't help but stuff them in their mouths.

Third, stir-fry and eat.

There are many classifications of this way of eating, but the variety is limited to Milla potatoes. People in China have French fries and chips from foreign fast food on their tables. There are also small potatoes, fried into strings and sprinkled with seasoning. The main audience is students. Adults often prefer potato chips when drinking. Take a medium-sized potato, peel it and cut it into eight pieces, one for three potatoes, and fry it until it is medium yellow and the shell is soft. Leave some oil in the pot and add pepper powder and salt. Stir-fry until the pepper and pepper are cooked, and when the potatoes are almost empty, take the pot and put it on the plate. At this time, you'd better drink some wine. The other way is more troublesome. Boil a pot of water, put a proper amount of salt in the water, peel off potatoes with a diameter of five or six centimeters, and cut potato chips with a diameter of about two millimeters. After the water is boiled, put it into the boiling water with a colander. Don't cook it for a long time, otherwise it will not be cooked. Just watch the potatoes change color for a few seconds, and then put them in the sun to dry. You can put it away and store it. Every time you want to drink, take one and turn it white with oil. A good appetizer is potato chips. But remember to make it on a sunny day, or the potato chips will be fried for nothing. And too hard, poor taste, too ugly!

Fourth, eat steamed.

There are three main ways to eat steamed potatoes. One is to dig out the big potatoes when they are just ripe, and continue to bury the soil to let the rest grow. Peel the peeled potatoes with a gentle rub, then chop them into cubes with a knife, mix them with buckwheat noodles and steam them in a pot. This is called potato rice, and then a pot of sour soup, baked a few dried peppers to eat with the soup, seasoned with salt on the dried peppers, bitten by the peppers, eaten with rice, and pickled cabbage, which is called delicious. The other is to peel two potatoes when cooking, cut them into pieces and cook them together. The rice is ripe, and so are the potatoes. This is my own invention. People in Weining cannot live without potatoes. Third, you can peel it without peeling it. It can be steamed in a steamer or microwave oven. The only difference is that if the starch content is high, the peeled ones will not bloom, but the peeled ones will. Starch crystallization can be seen in flowering, but not in flowering. One needs to be peeled again, and the other doesn't. The taste of blooming is slightly better.

In short, Weining people are very particular about eating, and they want to eat everything to the extreme. This is the same throughout Guizhou, especially Guiyang, the provincial capital. Confucius said that food is meticulous, and Guiyang has taken local snacks to the extreme. There are beef powder, mutton powder, spicy chicken powder, crispy whistle powder and vegetarian powder, which are delicious but completely different. There are Kangjia crispy noodles, Wang Chang noodles, spicy chicken noodles, bean curd noodles and large rows of noodles. The method is completely different, but it tastes good. Tofu includes Lei Jia tofu balls, love tofu fruit, small wine dried tofu, hairy tofu and blood tofu, each with its own merits.

There are hundreds of snacks such as silk dolls, so I won't introduce them one by one. Besides, I'm digressing! There are too many delicious foods in Guizhou. Maybe I'll introduce it separately when I have the chance.

I originally said potatoes, but I ended up writing so much more. If you are interested, you have to experience it yourself.
