"Six Blessings Circle" in Ningfu
Ningfu's "Six Blessings Circle" has exquisite craftsmanship, a long history and a special taste. On May 18, 2002, CCTV's "One Song" column entered Funing and held the "Ningfu Food Culture Festival" with the theme of "Happy Six Birthdays". As early as the middle of the Ming Dynasty, Funing entered the sea through rivers, with convenient land and water transportation. During the Wanli period, it became an important town in Huaidong. The salt industry is booming and business is booming. Known as "inexhaustible southeast, inexhaustible northwest." Businessmen from all over the world gathered in Funing to do business. In order to adapt to the tastes of people in different regions, the local chefs in Funing made the "Six Blessings Circle" symbolizing good luck and happiness. Chop the lean pork leg, add the egg to taste, add the fine powder and salt of ginger and onion, add a certain proportion of starch and stir, then make it into a ball with a spoon and fry it in an oil pan. Soft shell long fish
Soft-skinned long fish is a famous specialty dish in Funing county's history, and now it has become the main traditional brand dish in Huaiyang cuisine. On the occasion of the 20th anniversary of the establishment of Yancheng in 2003, the soft-skinned long fish selected by Funing Xinggu Hotel was rated as the first of the 20 famous dishes in Yancheng.
The long fish is Monopterus albus, and its production process is: selecting 1-2 wild Monopterus albus, scalding it with boiling water, then putting the scalded long fish in cold water, and cutting it into long fish shreds with a bamboo knife. Select a proper amount of long fish fillets to make chopsticks-wide long fish shreds, mix them with soy sauce, red koji, sugar and starch to make sticky seasoning, and add adjuvants such as pepper, ginger, onion and garlic. Boil soybean oil in the pot, stir-fry the long fish in the pot for a few shovels, immediately add seasoning and stir-fry for a while, then put the fried long fish on a plate, pour the fried cold sesame oil and sprinkle some pepper. You can eat it. This dish is crisp but not greasy, mellow and delicious, salty and sweet, and mild in taste. In the production, special attention is paid to the collocation of auxiliary materials and the use of heat to keep the original flavor of the main course and reflect the infiltration of seasoning. In the tenth year of Guangxu, the Governor of Liangjiang left to inspect the flood of Yuntiguan Huaihe River and was stationed in Huai 'an Prefecture. Huai 'an government specially invited the chef of Funing to cook a soft hemp fish for Zuo's adult to taste. On Zuo's recommendation, as one of the tributes of Huai 'an Prefecture, the soft-faced fish in Jinjing congratulated Cixi on her seventieth birthday.
Yilin glass art
Yilin glass technology is famous all over the country. Majiadang crab
Majiadang, located in the southwest of Funing, is a vast lake wetland in He Lixia, northern Jiangsu. Alan Lu Hehai, a water town in Zeguo, has a superior environment and is rich in high-quality hairy crabs. Majiadang is rich in fresh water resources and aquatic plants, with 64 species of plants and 75 species of animals. This is a paradise for wild animals. There is no pollution source within a hundred miles around. The green-shelled white-bellied crab produced in Majiadangdang District, with golden hooks and yellow claws after cooking, is fresh and tender in meat, rich in soluble trace elements, and is a seasonal delicacy on the table. Sun Taichu, a poet in the Qing Dynasty, chanted that "Baguizi floated early, and Wei Yang praised the crab as good as possible", which is the crab of Majiadang. Every autumn, the Majiadang aquatic products trading market on the edge of the swing area is crowded, and crab vendors from all over the country gather in Majiadang to buy Majiadang hairy crabs. In 2002, Majiadang Hairy Crab was rated as a pollution-free product in Jiangsu Province, and it was the only crab product in northern Jiangsu Province that was allowed to use the pollution-free mark. Majiadang produces 1000 tons of high-quality hairy crabs every year, which sell well all over the country.
