Hubei province is located in the middle reaches of the Yangtze River, north of Dongting Lake, so it is called Lake. Hubei Province borders Henan Province in the north, Anhui Province in the east, Hunan Province in the southeast, Chongqing City in the west and Shaanxi Province in the northwest. Hubei is known as the "province of thousands of lakes", and its dishes are mainly fresh freshwater fish, emphasizing freshness, tenderness, softness, smoothness and coolness.
According to my life and observation in recent years, I summed up several famous dishes in Hubei. The names of the dishes are as follows:
Lotus root ribs soup Lotus root ribs soup has a very high status in Hubei people's hearts. There should be no Hubei people who don't like it. The lotus root sparerib soup simmered on low fire is pink, the lotus root powder is waxy, and the ribs are soft and rotten. Lotus root ribs soup is not only a home-cooked dish, but also a hospitality dish.
Wuchang fish with scallion is famous all over the world because of the old chairman's sentence "only drink Yangtze River water and don't eat Wuchang fish". Wuchang fish will never be absent from Hubei famous dishes. I wanted to write about steamed wuchang fish. On second thought, relatives and friends around me prefer the scallion-roasted Wuchang fish, which is more delicious. Dipping a piece of fish in the juice on the plate is especially delicious. This dish is also a household name.
Mian yang Sanzheng mian yang is now Xiantao City, known as "the hometown of steamed vegetables". There is a local saying that "no steaming, no steaming". Mianyang's three steamed dishes are called steamed fish, steamed meat and steamed vegetables. Steamed fish is tender but not fishy, steamed meat is not greasy, and steamed vegetables are refreshing and not boring. At present, Mianyang Sanxi has been included in the intangible cultural heritage list of Hubei Province.
Spicy crayfish immediately arrived in the season of pond crayfish, and the crayfish culture area in Hubei ranks first in the country, so crayfish are eaten in various ways, with bright red color, full and curly shrimp tail, tender and delicious meat, rich sauce and endless aftertaste. In addition to spicy crayfish, there are also garlic crayfish, oil-stewed crayfish and spicy crayfish, which are deeply loved by people.
Fried Hongshan cauliflower with bacon Hongshan cauliflower is only available in Hongshan District, Wuhan. It was a tribute dish a long time ago, but now the output is not high, and not many people can eat it. But people in other parts of Hubei also like to grow red cabbage moss. Although it is not authentic Hongshan cauliflower, its entrance is fresh, sweet and smooth, and it is a kind of vegetable that you can never get tired of eating.
Because I haven't lived in Hubei for a long time and haven't been to many places, I only wrote a few local cuisines that I am very familiar with and that people around me like. However, there are many Hubei specialties that have been heard of but never eaten, such as the Panlong dish in Huangpi Zhongxiang, the fried meat with Quxiang, the fish noodles in Yunmeng County, the chicken soup in Wang Ji and the soft-shelled turtle in Jingsha.
