Steps to stir-fry fresh squid

1. Open the squid, remove the internal organs and tear off the film, then clean it.

2. Cut a cross pattern on the inner surface of the squid (as shown in the picture).

3. Slice the flower-cut squid as shown in the picture.

4. Cut the green pepper into cubes, cut the chives into sections, slice the ginger and garlic, and cut the dried chilies into short pieces and set aside.

5. Boil the water, add two pieces of ginger, blanch the squid, and remove the squid after it becomes rolled.

6. Heat the oil in a pan, add ginger, garlic, and dried chili until fragrant, then add green pepper and squid rolls and stir-fry. Add salt, cooking wine, and light soy sauce in order, stir-fry, and finally add the green onions and stir-fry. Stir fry.

Tips

The more finely you cut the squid, the more beautiful the squid roll will be. I didn't cut it well enough.
