1. First prepare a plate of water. Because the shape and size of shark fin are different, it is necessary to cut off the thin edge of shark fin first, and then soak the dried shark fin in water. During soaking, scrape the sand off the shark fin with a knife, and then soak it in cold water for 10 ~ 12 hours to soften it. When soaking, be sure to change warm water frequently.

2. After the dried shark fin becomes soft, put it in a pot of hot water and cook for one hour. Then stew with boiling water until most of the sand grains swell, scrape them with a scraper, and clean them to remove the sand grains. If you don't remove it, you can scald it with boiling water again. When you can lift it with your hands, take it out of the pot, rinse it with clean water 1 ~ 2 times and cook it.

3. Before cooking, the shark fins should be classified, separated by soft and hard, covered and stewed in the pot to prevent the small ones from being tender and rotten, and the big ones from being cooked thoroughly, hard for 5-6 hours and soft for 4-5 hours. You can't use iron pots and copper pots for shark fin stew. As sulfur protein is contained in shark fin, it will react with iron and copper to generate iron sulfide, which will cause black and yellow spots on the surface of shark fin and affect the quality of finished products. When making shark's fin, it is recommended to stew it with porcelain pots, stainless steel and other utensils.

In the process of shark fin stew, you need to check it from time to time. When you see that the shark's fin is completely cooked inside and outside, you can take it out, wash it and put it aside.

5. Don't pack the prepared shark fin with iron, otherwise the shark fin will appear yellow spots due to chemical changes, which will affect the quality. Hairy shark's fin should not be soaked in water for too long, so as not to stink and deteriorate.
