The history of Jiuzhuan large intestine
The dish of Jiuzhuan large intestine was first created by the chef of Jinan Jiuhualou Hotel during the Guangxu period of the Qing Dynasty. The shop owner's surname is Du. He is very rich and has opened nine shops in Jinan. He is very interested in nine, so his shops all have the character nine. The chefs of Jiuhualou have developed a famous dish called Braised Large Intestine. This dish uses all the ingredients and is cooked first, then fried and then grilled.
One time, the owner, Boss Du, was treating guests. When the waiter served the braised large intestine, everyone was full of praise after tasting the dish. One scholar asked: "It's so delicious and beautiful, I don't know how to give it a good name." , Boss Du was very happy that the guests liked this dish, but he did not give the dish a name. So he said to the literati: "Brother, please give me a name for this dish."
The literati was not very happy. In order to cater to the shop owner's habit of liking nine, and to praise the chef's craftsmanship, he named it After nine turns of the large intestine, we sat together and asked where the code came from. He said that Taoists are good at refining elixirs and are known as the Nine-turn elixir. Eating this delicacy is like taking it for nine turns, which is comparable to elixir. From then on, braised large intestine was renamed Jiuzhuan large intestine.
How to do the nine-turn large intestine?
General method:
1. Cut the top of the pig intestine into 4 cm long sections.
2. Cut green onions, ginger and coriander into fine pieces.
3. Boil the cut pig intestines in boiling water, take them out and drain the water.
4. Put the frying spoon on low heat, add white oil and sugar and stir-fry until the chicken blood is red, then add the large intestine.

6. When the soup is about to thicken, add white pepper noodles, cinnamon noodles, amomum villosum noodles, and peppercorn oil, stir evenly, and sprinkle with coriander powder.
