South China likes to eat rice, and Dali is no exception. Therefore, Dali's staple food is mainly rice or rice products, such as bait silk, bait slices, rice flour, rolled powder and so on. The bait must be put in front here, because if rice flour is still a food that can be eaten all over the country, then the bait is really only available in Yunnan, and the bait is different in different parts of Yunnan.
1, bait:
For Dali, the most famous is Weishan pā (the word "ba" is usually written next to the word "fire", but there is no such word), which is a soup made of pig bones and pig elbows, supplemented by simple spices. When eating, you can add pickles, pickles, chopped green onion, garlic paste, sesame oil and other seasonings according to your own preferences. Pork elbow meat melts in the mouth, fat but not greasy.
Good pā meat bait mostly makes a fuss about soup. The better the soup is cooked, the more delicious the bait is. Here is my favorite bait shop, next to Shunfeng Restaurant in Baizhou, the city. Their house is full every day, and they don't sell the bait after it is sold out. Usually it is around two o'clock in the afternoon, and sometimes it is sold out at lunch, which is quite nervous. In addition, their family will sell pot-stewed vegetables in the afternoon, which is also delicious.
In addition, the method is dry mixing, because the marinades in snack bars are different, so there is a big difference. I also recommend the same model of Baizhou, my favorite.
Muslim restaurants in Dali are also unique. There are many delicious halal bait shops in Dali. Muslim bait mostly uses beef bones to boil soup base, which tastes mellow. Toppings are generally fried sauce with minced beef, and some small shops also add braised beef. Of course, braised beef naturally varies from place to place.
As for beef bait, I recommend Wei Long halal snacks in Weilong Street in the city. This restaurant sells from breakfast to midnight snack, and the taste of the old brand has been very stable. In addition, the urban dumplings at the intersection of Xingfu Road and Jianshe Road, the halal snacks on Xingguo Road, and the big bright snacks on Renmin Road in the ancient city are all good choices.
2. Rice noodles:
In Yunnan, there are many different ways to make rice noodles. The famous ones are Mengzi Crossing the Bridge Rice Noodles, Maitreya Braised Chicken Rice Noodles, Dali Shredded Chicken Rice Noodles, Dehong Handmade Rice Noodles, Kunming Tofu Rice Noodles, Yuxi Pot Rice Noodles, and different varieties of braised rice noodles, fried rice noodles, stinky tofu rice noodles and canned rice noodles distributed all over Yunnan.
Speaking of Dali characteristics, I have to say that shredded chicken is cold rice noodles, and the locals call it cold rice noodles. The method of cold rice noodles is very simple, that is, adding various seasonings to rice noodles and recording the cold shredded chicken, but it is not simple to do it well, from the quality of rice noodles to the proportion of ingredients to the process of muscle marinating. When it's hot, it's sweet, sour and spicy in your mouth, and it's delicious.
Looking back at Renmin Road, the recommended ancient city, looking back at this famous old shop in Dali, because several brothers separated, there are now three facades operating on the same road, not far apart. Personally, I prefer the easternmost one. It's delicious. In addition to cold rice noodles, their grilled chicken skin is also a major feature.
3. Bait block:
This may be a lot of Dali people, from snacks to big breakfast, street stalls can be seen everywhere. There are generally two kinds of bait blocks in Dali, one is a rolling bait block, and the other is a hand-held bait block. Both are baked.
The way to roll the bait block is to bake the cake-shaped bait block on the fire, then sprinkle with various sauces, sprinkle with vegetarian dishes, chopped peanuts and meat sauce, or add ham sausage, fried dough sticks or marinated eggs, and roll together. Of course, if your appetite is ok, you can also choose to add them all and have a "family photo" to eat. Hand-rubbing bait blocks are more common in ancient cities. Semi-finished products are now made into cakes, with sauce in the middle and then wrapped in the shape of jiaozi. They are baked on the fire. You can choose salty or sweet.
Here, I recommend the bait stall at the mouth of the alley diagonally opposite Xiaguan No.1 Middle School in Longxi Road, the city (remember to ask the aunt who sells bait to help spread the sauce. Besides delicious food, her speed can also be appreciated. ), and the other is the "Yangji" bait stall at the intersection of Zhengyang Times Square. In recent years, "Yingfeng" bait-burning chain stores have sprung up all over Yunnan, but don't eat in Dali, because the taste of this chain store is obviously not competitive compared with the bait stalls that can be seen everywhere.
