How to determine the marbling of beef?
The determination of beef marbling is carried out by scientific and technical workers and front-line employees who have practical experience in production. Cattle with different breeds, ages, castration and similar nutritional conditions and slaughter weight are selected, and a number of beef cross-sections with different marbling richness are taken at the same position (12 ~ 13 rib), photographed and sorted according to marbling richness, and made into 65000.
With the standard sketch of marble grading, we will solicit the opinions of many slaughter enterprises and scientific and technological workers, and revise and finalize it before implementation.
Make a standard chart, when grading cattle, compare it with the standard chart to determine the grade.
The photographic map of beef marbling grade proposed by the author (draft, see color map 12, 13) will be revised and made into standard map for trial implementation.
