Why does photography use RAW format?

RAW is a native format, which is equivalent to writing down the signal of CMOS or CCD directly without any loss, so it contains the richest, most complete and original data information. Its biggest advantage is that it can adjust various parameters at will in the later software, without distortion or loss. The JPG converted from it is a lossy format. Theoretically, all the information has been rewritten.

So, if you want photos to contain the most information and get the best results, please use the RAW format.
