How to make a transparent shrimp dumpling
Ingredients: wheat starch, glutinous rice flour.
Filling preparation: fresh shrimp, carrots, bamboo shoots, ginger, white pepper, sesame oil and salt.
Practice steps:
Firstly, 3 parts of wheat starch and 1 part of water-milled sticky rice flour are mixed evenly, and this mixture is called shrimp dumpling powder. Take out most of the shrimp dumpling powder and melt it into sticky starch water with cold water, then pour the starch water into a non-stick pan and stir it quickly with low fire until the starch water becomes translucent dough.
Then put the remaining shrimp dumpling powder in a non-stick pan and knead it evenly with the translucent dough, and knead it into a smooth dough with moderate hardness, which is similar to the dough you usually wrap in jiaozi. After kneading the dough, turn a large bowl upside down and let the dough relax for 10 to 15 minutes.
This kind of shrimp dumpling dough is obviously different from ordinary flour dough. Ordinary flour dough will become soft after relaxation, but shrimp dumpling dough will become more elastic after relaxation.
Using the relaxation time of shrimp dumplings dough, shrimp dumplings can be used as fillings. My husband is a man who wants to eat at all costs, so my shrimp dumpling stuffing is full of materials.
Making method of shrimp dumpling stuffing;
Ingredients: fresh shrimp, carrots, bamboo shoots, ginger, white pepper, sesame oil and salt.

1. Wash and dry the fresh shrimp, cut it into small pieces of about 1 cm with a knife, wrap it with plastic wrap, then gently tap the surface with a meat hammer to make it slightly flat and scattered, and put it into a stuffing bowl for later use.
2. Cut carrots into 3 mm cubes, blanch them in boiling water, and then drain; Blanched bamboo shoots and chopped ginger.
3. Put the hammered shrimps, diced carrots, minced bamboo shoots and Jiang Mo together, add white pepper, sesame oil and salt, and beat them in the same direction with chopsticks until the shrimps are sticky and the stuffing is served.
Now that the dough and stuffing of shrimp dumpling skin are ready, roll the shrimp dumpling skin into the shape of dumpling skin and steam it in a steamer, which is basically the same as making steamed dumplings
But first boil the steamer, and then add the wrapped shrimp dumplings. The steaming time should be controlled at 5-6 minutes. Too long time will affect the taste of shrimp dumpling stuffing. So if there are ingredients in the stuffing that are not easy to cook, you must cook them in advance, and the best crystal shrimp dumplings will be ready.
