Staple food and specialties

Most Hindus in Nepal are vegetarians, some can't eat meat, and some are determined not to eat it. In most cases, meat is used to cook a kind of porridge called daal bhaat tarkari (bean porridge, a mixture of lentil soup, rice and curry vegetables). If you are lucky, you can add achar (kimchi), chapati (unfermented Indian bread), dahi (curd or yogurt) or papad (crispy pancakes) to your porridge. Ma Su (meat) is not common in this porridge. Sometimes-especially when cooked at home-bean porridge tastes very good, just right for the appetite after a whole day's hiking. But if you eat it every day, no one can stand it. Spinach, pumpkin and potato are the most common vegetables.

On the contrary, Nivari can eat meat very much. They sometimes eat beef (cows are sacred and can't be eaten), but they eat mutton more often, and they especially like wild boar. Although food in Nepal is not as spicy as food in other parts of the Indian subcontinent, heavy spices, especially peppers, are often added to food in Newwari. Many dishes in Newari are only cooked on special family activities or important occasions (and those dishes are often the best in Newari's food), so you have to find a way to get Newari to invite you to their home. However, several high-end restaurants in Kathmandu also offer first-class Nivari food.

Nepal is also a good place to taste Tibetan food (often better than local food in China and Tibet! ), but not most of the dishes are jiaozi (fried dumplings or dumplings) and noodles (length, width), which are similar in taste.
