I am a junior college student majoring in tourism management. I was assigned by the school to intern in a hotel. If I resign before completing the internship, can I get a diploma?

It depends on how your school negotiates with the hotel. Some are just internships. If you don’t want to do it when the time is up, you can go back to school or find an internship place by yourself. Then there will be an internship appraisal. Some schools have an agreement with the employer that you cannot resign during the internship, otherwise you will not be given a diploma, so you have to ask your school, but the latter is unlikely.
