Because the Hong Kong Immigration Department has a seven-day visa-free policy for transit passengers holding China passports. In other words, if you are going to a third country from China via Hong Kong, or if you are going back to China from a third country via Hong Kong, then you will be exempted from the visa for 7 days! Round trip twice is 14 days!
So it's no problem for you to stay for one day, just use your passport to enter and leave Hong Kong!
