There is a fairy tale village in Damaoshan Scenic Area, which I have been to twice. I was deeply impressed by the simple folk customs here and the kindness and hospitality of the villagers.

In this village, I saw many local snacks, such as plate pot, taro pot, five old pots, green jiaozi and so on. This is unheard of. I was surprised after tasting it. This delicious food has been hidden for too long.

The second time I went to Fairy Tale Village, I saw the whole village washing sweet potatoes. The sweet potatoes here are very special, round and big, and should be very high-yielding.

Ask them what they are doing to wash sweet potatoes, saying that they are making "sweet potato powder", but they are actually making starch, using the most primitive and rustic method.

So what is the purpose of making sweet potato powder? The villagers told me that they kept it for their own families, mainly to make black glutinous rice.

It turns out that the most important local snack is Wu Laoguo, and Wu Laoguo must be sweet potato powder made of a special sweet potato grown locally. Although it looks ugly and "silly and thick", the sweet potato powder is very suitable for making five old pots.

So what kind of snack is this black Lao Guo?

Say "Guo" first. Guo refers to grinding glutinous rice and japonica rice into powder first, and then extending it to cakes, snacks and other foods.

And "fruit" has derived various names because of the addition of various ingredients, such as sweet fruit, vegetable fruit, tsaoko, taro fruit, ginkgo and so on.

Wu is such a kind of food. It is a specialty of Dexing in Shangrao, Jiangxi. There is no other place, and foreigners will not do it.

In short, black glutinous rice balls are a kind of stuffed food, which looks like steamed bread and is steamed in a drawer, but it is very different from steamed bread, that is, on the outer skin.

The skin of black glutinous rice cake is not made of ordinary flour, but of sweet potato flour. Only in this way can the skin of black glutinous rice cake be crystal clear, elastic and as thin as a layer of paper, which can only be done by local old sweet potatoes.

The stuffing of five old fruits is actually not complicated. Made of tofu, lean meat, vegetables and even bean sprouts, it is light and not greasy. According to the local taste, it will be made into salty, spicy and fragrant, and then steamed in a pot for a few minutes.

Locals say it's legendary. This folk food has a long history and is deeply loved, but little is known to the outside world.

The production of black glutinous rice cake seems simple, but in fact there is a lot of learning and difficulty. In addition to using special sweet potato powder, there are many problems in making skin, stuffing, packaging and steaming.

All the delicious things are excavated through years of inheritance, and food culture is the root of a region's traditional culture, which exists in the memory of generation after generation.
