Features of Jiangxi Cuisine
The characteristics of Jiangxi cuisine are original flavor, thick oil but not greasy, rich taste, salty, fresh and spicy. The definition of Gan cuisine was first published in 1980 by Jiangxi tourism scholar Lv Jun in the book "East China Travel Guide" published by China Tourism Press in 1983 and "Jiangxi Land and Resources" published by Jiangxi Science and Technology Press in 1990. In other books, and in the 1980 travel magazine, the definition was given when writing an article introducing Gan cuisine. Before formulating this definition, tourism scholar Mr. Lu Jun participated in two expert symposiums held by relevant departments of the provincial government and solicited opinions from all parties. Based on the speeches of experts from the provincial catering department and cooking experts, the above definition is summarized.
Gan cuisine: It is the “literati cuisine” of Jiangxi throughout the ages. Since the Tang and Song Dynasties, Jiangxi’s “literati cuisine” has become more popular. For example, "Wenshan (Wen Tianxiang) diced pork", "Dongpo (Su Dongpo) meat", "Laobiao Chicken Soup" (named by Zhu Yuanzhang), "Four Star Watching the Moon" (named by Mao Zedong), etc. are all "literati dishes" of Jiangxi. Annotated. Jiangxi cuisine has a long history. As early as the Han and Jin Dynasties, Jiangxi's business and tourism activities were relatively prosperous. The Han Dynasty's "Historical Records·Biographies of Huozhi" once described Yuzhang (Nanchang) and others: "Rice and fish soup, or plowing with fire and water tillage, fruit, cockroaches and clams, can be enough without waiting for the merchants." "Yuzhang Ji" written by Lei Cizong of the Eastern Jin Dynasty once described the economic exchanges in Jiangxi at that time as "the place is thousands of miles away, and the waterways are connected in all directions", "Jiashu refined rice is good at tasting in all directions, and gold and iron gourds are given to all four areas." . "Rice soup with fish", "Jiashu refined rice tastes good in all directions", etc. are written about the prevalence of local food culture in Jiangxi at that time. In the Ming Dynasty, Yuan Mei also recorded Jiangxi's famous dish: "Steamed Pork with Vermicelli" in his "Suiyuan Food List".
