Xihe pancake has a long history. A wooden plate-shaped arc scraper with handle shovels the paste onto the cooked seeds and thinly coats the left and right sides. Oil wipe, also known as oil pad, is a square wipe sewn with more than ten layers of white cloth, dipped in edible oil to wipe the dumplings to prevent pancakes from sticking to them.
Generally speaking, pancakes have four characteristics: first, they are as thin as paper, easy to cook or heat, convenient to eat, and can be rolled up and eaten with various dishes. Second, pure grain production, rich in fiber, sugar-free, easy for human digestion and absorption. Third, it should be preserved for a long time, should not deteriorate, and does not need to add preservatives. Fourthly, the hardness and toughness are higher than those of other wheaten foods.
