In recent years, I have eaten roast whole sheep many times in Inner Mongolia and Xinjiang. Every time there is a "sheep opening ceremony", the form is greater than the content. By the time I ate it, the mutton was cold and lost its original taste. But the roast mutton here doesn't have so many complicated steps. When it is lifted, it will be broken into eight pieces, with perilla leaves and sauce next to it. The leaves are rolled with mutton and onions to relieve boredom, and the whole sheep are eaten like roast duck. Everyone will soon sweep away the meat around the roast lamb and praise it as the best roast whole lamb ever eaten.
