Huangshan Maofeng is one of the famous historical teas in China, produced in Huangshan, Anhui. Its color, aroma, taste and shape are all excellent, and its quality and flavor are unique. Huangshan Maofeng special grade tea is harvested from Qingming Festival to Guyu. It is locally called "Massaui slightly opened" based on the standard of one bud and one leaf opening.

After the fresh leaves are harvested, they are spread out and picked to remove old stems, stems and debris. The quality of Maofeng is picked from Jingtian and must be cured and baked on the same day. The fresh leaves are made into Maocha (freshly picked and made now), and then stored properly. In 1955, it was rated as one of the "Top Ten Famous Teas" in the country by the China Tea Company. In 1986, it was designated as a "Gift Tea" by the Ministry of Foreign Affairs of China. Brands include Xie Yuda, Dechangshun, Lao Xiejia, and Hongshi.

The production of Huangshan Maofeng is divided into four processes: picking, greening, kneading, drying and baking. Picking means 50% of the tea buds are mined before and after Qingming Festival and Grain Rain. The tea buds are picked every 2 to 3 days until the end of Beginning of Summer. Greening refers to the manual operation on the pan, which requires 250 to 500 grams of leaves per pot, the temperature is maintained at 150 to 180°C, and the tea leaves are heated evenly when they contact the pot surface.

Baking is divided into two steps: one is rough fire (sub-baking), which requires a temperature of 90~95°C and a baking time of 30 to 40 minutes. The temperature is required to be 65-70°C and the time is maintained. ; The second is Zuhuo (old fire), which lasts for 15-20 minutes.

The super-grade Huangshan Maofeng is shaped like a bird's tongue, tender and flat, with white hairs exposed, many hairs and sharp edges, the color is like ivory, and the fish leaves are golden. The bottom of the leaves are tender yellow and plump, evenly bright and blooming. The soup is clear and bright. Among them, "golden fish leaves" and "ivory-like color" (commonly known as tea bamboo shoots or "gold flakes", different from other hairy peaks) are two significant features that distinguish the special Huangshan hairy peak from other hairy peaks.
