The Origin of "Yang Dried Fish"
"Yang dried fish" is a popular primary processing method for making fish dishes in Jingzhou, Hubei Province. It is to scrape the scales of fresh fish clean (some are not scraped clean), dig cheeks, cut open the back to remove internal organs, clean them, and wipe them clean with salt and pepper. Then bask in the outdoor sun for a day or two until the fish is half a thousand, and then put it away.
Dried fish need to be salted to taste before drying, and then it can be dried in a cool and ventilated place. If the pickled dried fish is not in place, bacteria and other microorganisms will easily be produced during the drying process, which will make the dried fish stink or turn white and affect eating. Because salt can kill bacteria and prevent the growth and survival of microorganisms.
