Method for brewing rice wine with wine

1. First put about 500 grams of glutinous rice in cold water for about 12 hours. After soaking, rinse the glutinous rice several times with clear water and drain the water.

2. If the weather is too cold in winter, it takes a long time to soak glutinous rice, about 18 hours, and 12 hours in spring, summer and autumn. This soaking time must be long, otherwise the glutinous rice will boil easily and the rice wine will not taste good.

3. Prepare a steamer, add water to the steamer, put the soaked glutinous rice into the steamer after the water boils, steam for about 15 minutes, then turn off the fire, spread the glutinous rice as far as possible, air it to about 35 degrees Celsius, add 5 grams of sweet distiller's yeast and 80 ml of cold boiled water to the glutinous rice and stir evenly.

4. After the glutinous rice is stirred, press it hard until it can't move. Prepare a bigger bowl, put the glutinous rice into the bowl, take out a big hole in the middle of the glutinous rice, sprinkle a little distiller's yeast, wrap the bowl with plastic wrap, and finally wrap the bowl aside with a big cotton-padded jacket or quilt, so that you can drink rice wine for a day or two.

Dig a hole in the middle of the bowl to see if the rice wine is ready. If there is a lot of water in the hole, it means that the rice wine has been fermented and can be drunk. If not, wrap the big bowl again and keep it aside until the rice wine is fermented.

Generally speaking, yellow rice wine can be brewed for 24 to 36 hours in spring, summer and autumn. If it is winter, it will take longer, and rice wine can be brewed in about 48 hours. Of course, we can also use some methods to make rice wine brew quickly, that is, put the thermos bottle in the cotton-padded jacket wrapped in a big bowl in a semi-hot state, so as to ensure that the temperature in the cotton-padded jacket is about 35 degrees Celsius and make rice wine brew quickly.
