Historical legends of Huangpu bacon

Huangpu bacon has a long history. It is famous at home and abroad for its fine selection of materials, exquisite production and beautiful color and fragrance. It is a famous product of Guangdong bacon, and Huangpu is therefore known as the "hometown of bacon".

According to legend, the sausage was opened by a stall owner selling porridge in Dahuang Garden. His name was Wang Hong and he was called Mr. Lao Hong. In the 12th year of Guangxu (1886), one day in winter, it was extremely cold and raining, so the porridge materials such as pork, pork liver and vermicelli prepared by Wang Hong could not be sold. So he salted the meat with salt, sugar and soy sauce. When it rained, wang hong had to break the vermicelli sausage, cut the pork into pieces, stuffed it into the casing, and tied it up with water plants. After several days of exposure to the wind and sun, when the weather is fine, wang hong's products are unique in taste and resistant to storage. Wang hong did the same thing and put up a file for sale. Pork is made of casing, which looks like pig intestines, hence the name sausage. Unique flavor, storage resistance, sausage reputation, demand exceeds supply. Huangpu people compete to imitate. Later, some people in Huangpu made bacon with pork belly according to the method of curing sausages, which was called bacon.

The Pearl River Delta is hot and humid. Smart Huangpu people make bacon with salt, sugar, soy sauce and wine, and then dry it, which is not only delicious, but also moisture-proof. Later, Huangpu people used this method to make various parts of pigs, and summed up a set of pickling formulas and methods for making fancy varieties. Since then, Huangpu bacon has become famous all over the world.
