Liu Qing County is rich in bean curd skin, which has a long history and is well known. Folklore: The origin of clean tofu skin is related to Wen Tianxiang, an outstanding national hero and patriotic poet in the Southern Song Dynasty. In the first year of Jingyan in the Southern Song Dynasty (1276), the late emperor Zhao Yun, escorted by the right prime minister Wen Tianxiang, came to Nanjian (now Nanping) and recruited rebels through Shaxian, Liu Qing and Ninghua in an attempt to restore the Song Dynasty. Finally, Wen Tianxiang led the army to Changting and sent troops to Shaowu. Wen Tianxiang escorted Queen Yang to Huangbaiyang. Because of the hot weather, she was very tired and it rained heavily every day. Queen Yang ordered her to stay in Huang Baiyang (later called Yang Mu, now the natural village of Songxi Town). The villagers in Guomuyang plant a lot of soybeans every year. They exchange salt and homespun in the market and keep them for the holidays to make tofu. There have been wars in recent years, and plaster from other places can't be shipped in. I can't eat tofu for several years, so I have to cook soybeans as tofu. But how can it compare with delicious tofu? Queen Yang ate several meals of soybeans and thought it was not the taste. Why not make some tofu? She asked her entourage to ask several village girls for questions, only to know that tofu can't be made without plaster. Queen Yang and her entourage asked several village girls to cook ground soybean milk to eat. When it's hot, the floating film is made, and all the girls in the village are delicious. So I fished it out and let it cool. After drying, it is like a bamboo slice. Locals call it tofu skin. The village girl made soup or stir-fry with bean curd skin and gave it to the empress dowager. After eating it, Queen Yang was very happy and her appetite increased greatly. Wen Tianxiang was so happy to see the Empress Dowager, and immediately generate expressed his poetic feelings and recited a pair of beautiful sentences: "Although the mountain is high, it does not hinder the eyes of Gan Kun. Although the land is small, it can accommodate the Prime Minister."
