1, green tea
Green tea: refers to unfermented tea (zero degree of fermentation). Among them, the better varieties are: Luan Gua Pian, Biluochun, Longjing Tea and Xinyang Maojian Tea, which are familiar to us and belong to green tea. Green tea has the characteristics of mellow taste, high aroma, beautiful appearance and resistance to brewing. 2. Yellow tea
Yellow tea: refers to micro-fermented tea (degree of fermentation is 10~20m), which represents Huoshan yellow bud, mengle Yinzhen, etc. In the production process of yellow tea, yellow leaf yellow soup is formed by suffocating yellow. It can be divided into three categories: yellow bud tea, yellow small tea and yellow tea. Origin: Hunan, Sichuan, Anhui, Hubei and Zhejiang.
3. White tea
White tea: refers to lightly fermented tea (degree of fermentation: 20~30m), and the representative ones are Yinzhen and Bai Mudan. 4. Green tea
Green tea: refers to semi-fermented tea (fermentation degree is 30~60m). Tieguanyin, Dahongpao and Frozen Top Oolong, which we are familiar with, all belong to green tea. Green tea, also called oolong tea, is a kind of tea between green tea and black tea after proper fermentation. Both the freshness of green tea and the sweetness of black tea. Because its leaves are green in the middle and red in the edge, it is called "green leaves with red edges".
5. Black tea
Black tea: refers to fully fermented tea (fermentation degree is 80~90m), represented by Qimen black tea and litchi black tea.
The difference between black tea and green tea lies in the different processing methods. Black tea does not undergo enzyme deactivation during working hours, but withers, so that fresh leaves lose some water, and then it is kneaded (kneaded into strips or cut into granules) and then fermented, so that the tea polyphenols contained in it are oxidized and turned into red compounds. This compound is soluble in water and insoluble in water, but it accumulates in leaves, thus forming red soup and red leaves. There are three main kinds of black tea: competition black tea, kung fu black tea and red broken tea. Kung fu black tea is mainly distributed in Guangdong, Fujian and Jiangxi provinces, with Chaoshan congou tea as the main product.
6.black tea
Black tea: refers to fermented tea (fermentation degree is 100m), representing Pu 'er tea, Liubao tea and Hunan black tea.
The raw materials of black tea are coarse and old, and after a long period of accumulation and fermentation, the tea leaves are dark brown and pressed into bricks.
