What are the six categories of tea in China?
First of all, black tea
As we all know, black tea is a kind of fully fermented tea, but there is no step of deactivating enzymes in the production process, mainly using withering to deactivate enzymes. Black tea is particularly mild and the nerve stimulation efficiency is low. There are mainly three kinds of black tea with the function of warming and protecting the stomach: ethnic black tea, kung fu black tea and red broken tea. The representative teas are Qi tea, Dian black tea, Ning black tea and tea.
Second, green tea.
The difference between green tea and black tea is that it does not ferment, and it has many producing areas, high output and many varieties, so its export volume is also large. Green tea is not as bitter as black tea. It tastes light and slightly bitter. Green tea needs to be dried, mainly Longjing, Biluochun and Huangshan Mao Feng. Tea soup is bright and pleasant, with high aroma and mellow taste.
Third, white tea.
White tea is very special, fermented lightly, and not rubbed, so the fine white hairs on the tea can be completely preserved. Silver needles are precious because they are covered with white fluff and silver flowers. White tea is divided into Dabai, Narcissus White and Bai Shan, which are mainly produced in Fuding in the east of Fujian and Zhenghe in the north. It is a specialty tea in China. The brewed tea soup is yellowish and sweet.
Fourth, black tea.
Black tea, a typical fermented tea, has a long fermentation time and many producing areas, mainly distributed in Yunnan, Sichuan, Hunan, Guangxi and other places. The most notable features are: dark brown, mellow and sweet, dark and bright brown, orange-yellow tea soup, heavy taste and lasting aroma, mostly in the form of cakes, bricks and lumps. Tea substitute: Pu 'er tea has the effects of reducing blood fat, losing weight and beautifying.
V. Green tea
The most representative green teas are oolong tea, Tieguanyin tea and Dahongpao tea. This kind of tea is semi-fermented, between black tea and green tea. The central part of the leaves is green and the leaves are red. Green tea has both the fragrance of green tea and the mellow fragrance of black tea, which is mellow, slightly bitter but sweet. Widely planted in Fujian, Taiwan Province and other places.
Six, yellow tea
Yellow tea, micro-fermented tea, with yellow leaves, clear soup color and different taste from black tea, belongs to refreshing and mellow type. There are yellow bud tea, yellow small tea and yellow tea. Junshan Silver Needle, Huoshan Yellow Bud and Mengding Yellow Bud in Hunan are all distinct representatives of yellow tea. Yellow tea has the effects of refreshing, promoting digestion and resolving stagnation.
