It is suggested that pepper farmers master the picking time in the mature stage of pepper. Pay attention to drying and keeping fresh after picking to ensure the freshness of peppers.
Drying method of Zanthoxylum bungeanum:
1. Drying place: choose clean and dry bamboo mats, colored strips of cloth, etc. For drying. Bamboo mats and colored strips are ventilated overhead with bamboo poles, which can avoid dirt and other sundries. When drying, don't put it on the cement floor, let alone on the plastic sheet, so as not to lose the bright red luster of the pepper after heating. Choose a sunny, direct and sheltered venue.
2. Drying method: Gently spread the picked Zanthoxylum bungeanum on a bamboo mat or striped cloth, and the drying thickness is about 1.5 ~ 2 cm. Should not be spread too thick, uniform thickness, not allowed to pile up. The key technology of spreading and drying is to ensure that the cells are not broken and remain intact, otherwise they will emit fragrance and turn black, which will affect the quality.
Zanthoxylum bungeanum will crack when exposed to the hot sun for 5 ~ 6 hours. As long as the pepper fruit cracks, the water in the pepper skin evaporates and loses water, and the cells are not easy to crack. After the granules are completely exploded, gently pat them with a bamboo stick or flail to separate the seeds, fruit stalks and peels, and then separate them with a sieve, windmill and other tools to get clean and fresh peppers. On the same day, it is a sun, not a few times. Peppers usually picked in the morning are dried at noon or afternoon.
