Bamboo shoot: the tender bud of bamboo that first grows from the soil and can be cooked and eaten.

Bamboo shoots grow slowly in the underground stage for a long time, and some bamboo species span more than two years. In late summer and early autumn, some fat lateral buds on the whip of Zhuang bamboo began to germinate and differentiate into bamboo shoots. After cell division and proliferation, the meristem at the top of bamboo shoots further differentiated into nodes, nodes, bamboo dance, lateral buds and mesophyll, and gradually expanded, extending outward at an angle of 20 ~ 50 with the bamboo whip, while the tip of bamboo shoots was bent.

In early winter, bamboo shoots are plump, yellow and covered with fluff, which is called winter bamboo shoots. Some winter bamboo shoots that grow from shallow whips begin to break ground in winter and show sharp points, which can be dug and eaten. In the low temperature period in winter, bamboo shoots are dormant, and when the temperature rises in spring, they continue to grow and emerge, which is called spring bamboo shoots.

In the growth stage of bamboo shoots in soil, cells divide and differentiate constantly through apical meristem, forming nodes, internodes, internodes, bamboo shoots, lateral buds and intermediate meristem. Before excavation, the number of nodes of the whole bamboo shoot (also the whole plant) has been fixed, and no new nodes will be added after excavation.
