Vegetarian Chili

"You won't believe this is vegetarian" Chili! Full of many flavors, this is the best vegetarian pepper I have ever eaten. The secret is that you can customize six (or more) different types of peppers according to your own preferences and spice level.

Oh, it's gluten-free, too. You can easily become a vegetarian without losing your taste, or in cold weather, you are eager to eat amazing texture in the perfect pepper.

What is vegetarian Chili made of?

Vegetarian peppers are basically the same as meat peppers, except that you use vegetarian/vegan ground beef substitutes. Of course, if you eat meat, use smoked cattle? Sausages made of smoked turkey and even peppers are a pleasure. But in this simple vegetarian pepper, pepper is the star of the performance.

When I first ate this minced beef with Chili peppers (almost all grocery stores in the frozen food area), I found it almost indistinguishable. In fact, if you don't mention that this pepper is vegetarian, then almost no one will know.

Vegetarian Chili ingredients

Pepper? Not all peppers are spicy! Some are mild, others are spicy. The fragrance level is indicated by the scovill scale, and the scovill scale measures the calorie level in "scovill thermal units" (SHUs). The different tastes and colors of these peppers make this dish so eye-catching.

Pepper has different tastes besides high and low calories. The important thing about this recipe is that it can experiment and add your favorite peppers. Over time, you can find out your real favorite pepper flavor and choose the pepper flavor according to your own preferences.

Six peppers in this recipe (all of which can be widely used)

Pepper description/pleasant taste

A small, super spicy orange pepper with a strong fruit flavor. 150,000-325,000

Serrano is a hot green (or red) pepper with higher calories than its distant relative, jalapeno. It has a earthy taste and a crisp taste. 10,000-23,000

A popular green (although they can have other colors) pepper, medium fire. A little lighter than Serrano. 2,000-8,000

Anaheim is a mild, large green pepper, usually with a strong pepper flavor. 500- 1,000

Banana sweet yellow pepper, unheated. 0-500

Kurenai Rin grass is a kind of unheated sweet pepper. 0

These six kinds of peppers are mixed together, emitting a pleasant fragrance, with a high content of moderate spices and attractive colors in the bowl. The beauty of this recipe is that you can try to make it your own. Add Bo Blano, Red Fresno or Bird's Eye Pepper. Or just change the quantity of each pepper to suit your taste.

Tip: The calories of Havana peppers seem to vary greatly. I like to taste the tests first to make sure they are not pure fire, and then adjust the amount I add to the pot accordingly.

Capsaicin-a substance that heats peppers-is used as a painkiller and is said to have other medicinal values (including losing weight! )。 Therefore, the heat on your tongue may just be good for you.

San Diego's specialty agricultural products are a good place to find all kinds of peppers, and the website is crowded with information. Another important resource about pepper information is "? Pepper is crazy. "

Important: Please wear gloves when cutting peppers! Otherwise, capsaicin in pepper will get on your fingers, and it will be a pity to touch your eyes or other sensitive parts later. Even washing with soap can't effectively remove 100% capsaicin. Just put on gloves and take it out.

"Meat" I tested the formula with the bagged "broken" products from Morningstar Farm and Cardin. But there are many choices, including going beyond meat and impossible hamburgers. One advantage of minced meat is that they are "pre-cooked", so it will take less time if you fry the ground beef brown.

I added the earth-balanced butter substitute to imitate the fat in the undrained ground beef and give it a rich flavor. You can use butter or margarine, but Earth Balance is a vegetarian, and the result makes no difference.

Tip: If you want to make this pepper lighter, please cut the butter substitute in half, or fry the onion with only 2 tablespoons olive oil.

Chili powder and pepper are just ground dry peppers, which are used to increase flavor and calories.

Tamari is a Japanese soy sauce, which is thicker and richer (gluten-free) than ordinary soy sauce. It provides umami flavor (because this Worcestershire sauce contains anchovies, it represents Worcestershire sauce in vegetarian recipes).

Cumin adds a complex earthy flavor. Salt and black pepper speak for themselves.

Cinnamon is a popular pepper ingredient, especially in Cincinnati pepper. I didn't use it in this recipe, but many people like the taste it adds, so if you like, continue to add teaspoons.

The rest.

Add color and flavor to diced tomatoes and ketchup, and help reconcile the heat of sweet peppers.

Give pepper some good substances from red kidney beans, the color and the other one are very textured.

Onions add flavor. I also added a cup of vegetable soup or broth to reduce the consistency without diluting the taste.

Gradually make vegetarian peppers

Slice the pepper with gloves, take out and discard the seeds and endosperm. Then cut the pepper into small pieces.

Heat a large pot or pan over medium heat. Dice onions, sprinkle with a little salt and 4 ounces of earth balance butter until they become translucent.

Add "meat" and another 4 ounces of "earth balance" and continue heating until the mixture is stable and heated.

Add beans, tomatoes, ketchup, peppers and vegetable soup.

Stir and add spices to mix thoroughly.

Cover the pot and simmer for an hour.

In about an hour, vegetarian peppers can be eaten with your favorite ingredients.

The main secret of vegetarian Chili

Make Chili a day in advance. The taste becomes more complicated and there is a chance to blend all night, so the next day will be better.

Always wear rubber gloves when cutting or cleaning peppers. Take it out, throw it away immediately after you finish, and wash the chopping board and knife with warm soapy water.

Remove the seeds and pith of pepper, because the pith is really spicy, and it doesn't have much taste except heating. The seeds have bitter taste, which destroys the texture of pepper.

Taste the pepper before adding it. If something is very hot, you may need to add less things to start.

If the pepper is too spicy, you can add a can of diced tomatoes to reduce its content without affecting the taste or consistency. If you really use too much spices, add some beans and "meat".

What if I am a real spice weakling? In this case, the best way is to reduce Chili powder and pepper. If fresh peppers add too much heat, please reduce the number of Habaneros and add milder peppers. If only one person can't stand the heat; Add a little sour cream to their part, and stirring will reduce the calorie level.

notes

Jim Miller's cookbook

If you like other kinds of fresh peppers, you can throw them in or dip them in twos and threes. Please be careful not to be too spicy.

Seeds may increase bitterness and affect texture, and the taste of pith is often spicy and tasteless.
