How to open a wok?

1 Steps of iron pot cooking

Clean the whole pot. After buying the pot, put it under the faucet, wipe every corner with a soft cloth, and wash away the impurities and dust in the process of casting the pot. Do not use any washing products.

Iron pots are all open flames. Turn the fire to a minimum and the water drops in the pot are slowly dried.

Keep the fire low, find a piece of fat pork belly or fat, and spin and smear the whole pot. This process takes at least 3 to 5 minutes, and the fat turns black and zooms;

Turn off the fire, the pot is cold, simply rinse it with cold water;

Turn on the small fire again, prepare for the second boiling, rotate all parts of the pot, add at least four sides at the bottom, bake with small fire, and continue to rotate and grease. This process will continue for 3-5 minutes;

Rinse clean, continue to dry on low heat, then coat with a layer of soybean oil or peanut oil, and leave it overnight to complete maintenance. This iron pot can be cooked, and it can be used normally from now on.

2 iron pot boiling steps

Prepare a piece of raw fat pork;

Remove all labels on that pot body of the new iron pot, and clean the pot body with flowing hot water; Dry the water (especially the bottom of the pot), put the pot on the stove and dry it with low fire;

Put the raw fat pork into the pot, press the raw fat pork with the kitchen clip, generally as "soap", and constantly wipe it on the inner wall of the pot in a spiral way from the inner ring to the outer ring, so that the spilled oil can evenly spread over the whole pot surface;

With the continuous wiping, more and more melted black lard overflows the pot, and the "soap" will turn black and become smaller;

Remove the whole pot from the stove fire, pour out the black lard, wipe it with kitchen paper, dry it with hot water, and repeat it with the stove fire.

Step 2, 3 and 4;

After the surface of raw fat pork hardens, the surface layer can be removed with a knife and then wiped in the pot; Every time you rub it for one more round, the pot surface will look cleaner than before, so that the operation can be carried out until the raw fat pork no longer turns black; (Repeat about 3~4 times)

Rinse the wok with hot water to dry the water, put it on the stove fire to dry, and apply a thin layer of vegetable oil with kitchen paper. "Boiling curing" is completed.
