Mousse yogurt, concentrated yogurt 90g, whipped cream 90g, refined sugar 18g, lemon juice 3ml, salt 1 pinch, gelatine 6g, purple potato mousse, milk 100g, purple potato puree 120g, whipped cream 60g.

Manufacturing steps:

1. Peel purple sweet potato, cut into sections and steam. (steam 500g, it doesn't matter if it's a little more)

2. Put it in a fresh-keeping bag while it is hot and roll it into fine mud with a rolling pin. The finer the better.
