According to historical records, on May 3,1,1956, Chairman Mao visited Wuhan from Changsha. He swam across the Yangtze River in Wuhan for the first time. He is in a particularly happy mood and has a good appetite. While dining on the boat, he ate up a plate of "steamed wuchang fish". Conquering the natural barrier of the Yangtze River and tasting the comfort of Wuchang fish, the chairman happily picked up a pen and wrote down the famous sentence of "adjusting water to swim", which began with "drinking Changsha water and eating Wuchang fish".
The scientific name of Wuchang fish, Megalobrama amblycephala, is a kind of bream, with a flat body and a weight of less than three kilograms. Wuchang fish is called because it is produced in Fankou (now Ezhou City, Hubei Province), and the area around Fankou was called Wuchang in ancient times, so people also call it Wuchang fish (1954 confirmed by the state). Fankou is the connection between Liangzi Lake in Jiangxia District of Wuhan and the Yangtze River, from which the river can pour back into Liangzi Lake. The water quality is good and the aquatic plants are rich, which is suitable for Wuchang fish to thrive, making Wuchang fish tender and white, rich in protein and fat, and becoming a rare freshwater fish, enjoying a good reputation at home and abroad.
Now people can cook Wuchang fish into dozens of fish dishes with different flavors, such as steamed wuchang fish, stuffed Wuchang fish and braised Wuchang fish. You can also use it to pickle preserved fish, which is particularly mellow.
This dish can be eaten in hotels and restaurants in Wuhan, but the most pure taste is Wuhan East Lake Hotel (a special place for foreign guests).
The medical community believes that eating Wuchang fish often can prevent anemia, hypoglycemia, hypertension and arteriosclerosis.
At present, Liangzi Island in liangzi lake, Ezhou is a good place for people to relax and eat fish. Every holiday, tourists on the island compete to eat fish, which greatly promotes the development of the local economy.
