Stinky tofu varies greatly in different places. In my impression, the stinky tofu I ate when I was a child was golden in color, crisp on the outside and dry on the inside, compact, and usually served with hot sauce or even ketchup.

The stinky tofu in Changsha is black and gray. Why?

Because there is black lobster sauce in the brine ingredients of Changsha stinky tofu, tofu will turn black after soaking in brine for a period of time, and the longer the soaking time, the better the taste.

In addition to color, eating is also very different. A small hole will be dug in the middle of Changsha stinky tofu, and ingredients such as pepper, onion and mustard tuber will be poured on it. Crispy skin, softer and juicier inside! Black Classic should be the hottest stinky tofu brand in Changsha. It is said that there will be a long queue, but fortunately I didn't meet it ~

However, Jinding feels better than black classics. As can be seen from the picture, Jinding's juice is richer than black classics, and its taste is not very spicy. If I hadn't eaten too much, I would have eaten all the other stinky tofu in the street.
