Method for making Anxi tea

1. Picking: select new tender tea buds and tea leaves in spring, summer and autumn.

2. Drying and withering: putting fresh tea leaves on gauze or bamboo baskets for indoor drying can reduce their moisture, oxidize tea leaves and change their texture.

3. Kneading: After drying and withering the crude tea, it is turned over and kneaded, and the tea juice is released by grinding to make it absorb light, and the tea particles are rubbed and twisted together. Authentic Tieguanyin needs to be kneaded dozens of times to promote the contact between tea juice and air and start acidic fermentation.

4. Drying: the cooked tea leaves are dried on charcoal fire to keep their shape and aroma, and finally pearl tea or linear tea is obtained.

5. Small fire baking: Authentic Tieguanyin needs 2~3 small and medium fire baking to make tea.

6. Blending: Blending according to different years, regions, tea gardens and weather to make tea more mellow.

7. Selection: Finally, the selected tea leaves are screened, picked and carefully selected, and then screened with curtains to obtain high-quality tea leaves.
