Rice can be steamed or boiled. Steamed rice is steamed by steam (farmers steam rice in cages, restaurants steam rice in cages), while boiled rice is boiled in water (cooked in electric cookers). The two kinds of rice are just different in cooking methods, and their nutrition should be similar, but the steamed rice is soft and has less steam. The rice is granular, sweet and delicious, while the stewed rice is boiled. If we don't master the amount of water and some tricks of stewing rice, the effect is still not ideal, and the most commonly used cooking method in our daily life is stewing rice in an electric cooker, so we still need to master some practical methods to make soft, glutinous, sweet and full-grained rice.
How to make steamed rice taste better, from the following aspects.
(1) Taomi: Don't Taomi too many times, not more than three times. When washing rice, don't rub it hard, just grab it gently and stir it, so as to avoid the loss of vitamins, protein and other nutrients on the surface of rice due to the above actions and reduce the flavor of rice. In addition, Taomi water is a good thing, which can be reserved for watering flowers and pickles.
(2) Soaking rice: Let the washed rice soak in water for more than ten minutes before stewing. When water is added, the ratio of rice to water is 1: 1.2. If you can't measure it, you can smooth the rice and put your index finger on it until the amount of water added is less than the first knuckle.
(3) What can be added before stewing to enhance fragrance:
-Before stewing rice, add a few drops of white vinegar to the rice, because white vinegar will volatilize when heated, and at the same time accelerate the hydrolysis of starch in the rice, so that the steamed rice is not sour, but softer and sweeter, with full and distinct particles and whiter.
-add a few drops of sesame oil or other vegetable oil, some like lard, depending on personal preference, so that the steamed rice is shiny, soft and sweet.
(4) You can also stir-fry some meat and vegetables with sauce and stew them with the soaked rice. This lazy practice, also known as "one pot out", can freely mix ingredients and make different flavors, so that the stewed rice is also very fragrant, which is also a common method.
(5) Some friends like to add coarse grains such as purple rice, sorghum and millet to enrich their nutrition. Remember to add more water when stewing, because coarse grains are "drafts".
(6) If the rice is raw after steaming, you can use chopsticks to evenly insert some holes in the rice. When inserting the jack, be careful to insert it into the bottom of the pot, then pour some warm water from the hole and heat it for stew. If you pour two or three spoonfuls of rice wine and heat it, the effect will be better and the taste will be improved a lot, which will not affect the normal consumption. If the cooking is not good, it is better to add a proper amount of boiling water, stir the rice evenly and reheat it to make a pot of soup rice, which is better than wasting it.
(7) When the leftovers are heated, you can sprinkle a little salt and add about 50 grams of water, so that the heating of the rice cooker will automatically stop after 3-5 minutes, just in time. If you add too much water, rice will become sticky easily. It tastes like it's just steamed.
Rice cookers stick easily, but they are really bad. Put the rice on a plate, add some light salt water and steam it in a steamer for a few minutes, and the taste will be the same as that of the newly steamed rice. Of course, sausages, eggs and vegetables can be added to the leftover rice to make fried rice, which tastes more fragrant. You can also make the leftover rice into sweet pancakes. First, add some sugar and sesame seeds and stir them evenly. Put a proper amount in a wok with a spoon, press them into cakes, and then fry them on both sides.
