Radish is a common vegetable on people's table in both the north and the south, and the way of eating radish in different regions is also very different. For example, the radish rice in Quanzhou, Fujian Province is full of Minnan characteristics and tastes tender and smooth. Guangzhou radish cake, which means "step by step", is also indispensable for morning tea. In autumn and winter in the north, all kinds of pickled radishes are popular dishes.

Some time ago, I tasted a sour, sweet, slightly spicy and crisp pickled radish in the hotel, which was quite distinctive. It's very different from the pickled radish made at home. It tastes obviously sweet and crisp with Sprite. It is very good to drink with rice porridge or as a side dish. I want to share it with you.

Ingredients required: radish 1 piece, 5 millet peppers, lemon 1 piece, appropriate amount of white vinegar, appropriate amount of sugar, 4 cloves of garlic, appropriate amount of salt and sprite 1 bottle.

1. Prepare seasoning. Flatten garlic with a knife and chop it. Wash the millet pepper and cut it into rings. Lemon peel is rough and can't be cleaned with water. You can rub it with salt. Wash the salt with water and cut it in half. One part is sliced and the other part is put aside.

2. Wash the soil on the surface of the radish with clear water, then scrape off the epidermis and continue to cut the radish into long thin slices with a scraper. Scrape all the radishes into thin slices, put them in a bowl, sprinkle with 1 spoon of salt, and marinate for about 10 minutes to kill some water in the radishes.

Tip: before pickling radish, killing water with salt can not only remove the "bad smell" of radish, but also make the pickled radish more crisp.

3. Prepare the right amount of cold water in advance, pour the right amount of cold water into the dehydrated radish, wash the salt in the radish and take out the radish slices.

4. Put minced garlic, millet pepper rings and lemon into a small bowl, add 1 tbsp white vinegar, 1 tbsp sugar and 1 tbsp salt, pour half a bottle of Sprite, squeeze the remaining half lemon into it and stir well, and pour a little boiled water and stir well.

5. Put the processed radish slices neatly into a container, pour the prepared juice, and the juice should not pass through the radish slices, seal with a layer of plastic wrap or cover, and marinate for about 1 hour to obtain a sour, sweet and crisp Sprite pickled radish.

A novel method of pickled radish, sour and crisp radish tastes very different from pickled radish eaten in peacetime, which is very surprising. You don't have to roll the radish slices, just for the sake of beauty. Although it takes some effort, it can also add a little fun to this lonely autumn day.
