Steamed abalone

10 abalone/ginger/onion/garlic/steamed fish soy sauce

Red braised abalone

600g fresh abalone / 250g chicken / 250g pork belly / chives

Ginger / 25g rock sugar / 30g Shaoxing wine / 30g soy sauce / refined salt

MSG/pepper/lard 75g/sesame oil/wet starch 10g

Small abalone braised with spareribs

Cinnamon/star anise/braised Soy sauce

Dark soy sauce/cooking wine/sugar/sesame oil/garlic

1. Rinse the ribs, shred the ginger and cut the green onions into large pieces and set aside

2. Use a knife to gently remove the meat from the small abalone, and cut a few strips horizontally and vertically on the surface of the small abalone like cutting squid flowers, keeping the abalone meat from being cut

3. Put the ribs in the pot under cold water , bring to a boil, and drain off the foam

4. Heat a small amount of oil in the pot, add onion, ginger and garlic and stir-fry until fragrant, then add the ribs and continue to stir-fry until the surface is slightly charred, add the small abalone, Pour in an appropriate amount of cooking wine, braised soy sauce, and sugar and stir-fry. Pour in enough boiling water to cover the ribs. Add 1 star anise and a little cinnamon. Transfer to the pressure cooker. Bring to a boil over high heat, then reduce to low heat for 20 minutes. Pour back into the wok. Reduce the juice over high heat, add an appropriate amount of salt, sugar or dark soy sauce for color, and pour in a little sesame oil before serving

Steamed abalone with garlic vermicelli

Abalone/ Vermicelli/ Garlic

Steamed fish with soy sauce/minced chives/minced red pepper

1. Cut the vermicelli into short pieces, soak in warm water until soft, squeeze the garlic into minced garlic

2. Rinse the abalone clean, then use a small toothbrush to brush the shell clean; use a knife to dig out the abalone meat, remove the internal organs, and rinse the abalone meat clean; cut a few horizontally and vertically on the surface of the small abalone like squid flowers. Cut a few strips, keeping the abalone meat from being cut; put the soaked vermicelli in the abalone shell, and put the cut abalone meat on top of the vermicelli;

Garlic-flavored baby abalone

Abalone/garlic/tempeh sauce/salt

1. Insert the knife between the meat and shell of the live abalone to separate the meat shell

3 .Wash the abalone meat clean with a small brush under running water, cut into two-thirds of the thickness with a cross-cut knife, and then put it back into the washed abalone shell

4. Chop the garlic into small pieces. Put it into a small bowl, heat up a small spoonful of oil, pour it in, then take out the tempeh and chop it into pieces, put it into a small bowl, add (or not) salt according to the saltiness, and mix evenly

5 .Scoop out the mixed garlic tempeh with a small spoon, cover it on the small abalone, place the abalone on a plate, put it into a steamer with boiling water, turn on high heat, and steam for 6 minutes

Abalone Porridge

Abalone / 3 slices of ginger / 2 green onions / 4 taels of chicken
