What is the water case in the hotel?

The water case in the hotel, also known as the water case, refers to the personnel engaged in washing rice and vegetables, opening chickens and fish, cleaning meat and so on. Generally, it helps chefs, and it is different from "white case" and "red case".

In restaurants, hotels and kitchens in the north, there are usually three kinds of people:

Water case: people who usually wash rice and vegetables in the kitchen, dig out chickens, fish and meat.

Red case: a worker who usually cuts meat in the kitchen.

White case: a worker who usually makes dough in the kitchen.

In the south, it can be divided into water cases, hard cases and dry cases.
