The beverages and delicacies operated by Hu restaurants in Chang'an City should mainly be Hu wine and Hu food, and some also sell Tang cuisine. The poem "Gift to Hu Ji in the Hotel" written by He Chao said: "Hu Ji Chun Hotel, the orchestral night is sonorous,... the carp is cooked on the jade plate, and the sheep is being cooked in the golden tripod." The carp and chicken mentioned in the poem must be Tang cuisine, which is a traditional dish. In Chinese cuisine, there was a saying of "flying knives and carp" in the Tang Dynasty.
