How to introduce induction cooker

Induction cooker, also known as induction cooker, is the product of modern kitchen revolution. It allows heat to be generated directly at the bottom of the pot, without naked flame or conduction heating, so the thermal efficiency is greatly improved. It is an efficient and energy-saving kitchen utensil, which is completely different from all traditional kitchen utensils with or without fire conduction heating.

Induction cooker is an electric cooking appliance made by electromagnetic induction heating principle. It consists of high-frequency induction heating coil (i.e. excitation coil), high-frequency power conversion device, controller and ferromagnetic pot bottom. When in use, alternating current is applied to the heating coil, and an alternating magnetic field is generated around the coil. Most of the magnetic lines of the alternating magnetic field pass through the metal pot, which produces a lot of eddy currents at the bottom of the pot, thus generating the heat needed for cooking. There is no open flame in the heating process, which is safe and hygienic.

Induction cooker is a new type of cooker in the kitchenware market. It breaks the heating principle that the traditional open fire cooking method uses magnetic field to induce current (also called eddy current). The induction cooker generates an alternating magnetic field through an electronic circuit board. When the pot bottom of the iron pot is placed on the furnace surface, the pot bottom cuts alternating magnetic lines, and an alternating current (i.e. eddy current) is generated at the metal part of the pot bottom. Vortex makes iron molecules in the pot move irregularly at high speed. The molecules collide and rub with each other to generate heat energy (so the heat source for cooking in the induction cooker comes from the bottom of the pot instead of the induction cooker itself, so the thermal efficiency is nearly 1 times higher than that of all cookers), which makes the cooker itself heat up at high speed to heat the food, thus achieving the purpose of cooking. It has the advantages of rapid temperature rise, high thermal efficiency, no open flame, no smoke, no harmful gas, no thermal radiation to the surrounding environment, small size, good safety and beautiful appearance, and can complete most cooking tasks in the family. Therefore, in some countries where induction cookers are more popular, people call them "the god of cooking" and "green cookers".

[Working process] Because the induction cooker generates heat by directly inducing a magnetic field at the bottom of the pot, iron sensitive to magnetism should be selected as the cooker. Because iron fully absorbs the magnetic field, the shielding effect is very good, which reduces a lot of magnetic radiation, so the iron pot is safer than any other cooker. When the loop coil is energized, its effect is equivalent to a magnetic bar. Therefore, there is a magnetic field N-S pole on the surface of the coil, that is, there is a magnetic flux crossing. If the power supply is alternating current, the magnetic pole of the coil and the magnetic flux crossing back to the road will change.

When the magnetic conductive metal surface is placed above the annular coil, current (eddy current) will be induced on the metal surface. Vortex will make iron molecules in the pot move irregularly at high speed, and the molecules collide with each other to generate heat energy.

The greater the induced current, the higher the heat generated and the shorter the cooking time. The greater the induced current, the greater the change of magnetic flux passing through the metal surface, and of course the stronger the magnetic field strength. In this way, the more turns are needed to wind the original coil with alternating current. Because of the high-intensity magnetic field induction, there is no current on the surface of the stove, so the surface of the stove will not produce high temperature when cooking food, so it is a relatively safe cooking appliance.

The induction cooker is mainly composed of two parts: the electronic circuit part and the structural packaging part.

Improper heating protection

Try to put a small object like an iron spoon on the kitchen surface and turn it on. Usually, when the pot area is less than 65%, it cannot be heated normally. Some induction cookers don't have this function.

Fourth, test the adaptability of the pot.

In the process of electrifying and heating, the actions of taking and putting the pot are repeated many times to see if the time for resuming heating is normal. Usually, the heating will resume after taking the pan and putting it back 1-3 seconds.

Hot hands, if the recovery time exceeds 5 seconds, it means that this machine has poor adaptability to pots and pans.

V. Test temperature control

Check whether the induction cooker has the design of 100℃ temperature zone, and boil water with a matching pot to see if it can still maintain the boiling state at 100℃ after boiling. Improper temperature design will lead to the hidden danger of machine burning, because many internal protection functions are based on temperature monitoring. In the process of boiling water, you can move the pot to the edge of 1/4 or 1/3 and keep it for about 1-2 minutes. Should be able to continue heating, indicating that the induction cooker heating function is normal. Choose as many temperature adjustment gears as possible, and it will be more convenient to use if it can be gradually increased to 270℃ at 10 or 20.

1. Power output stability. A high-quality induction cooker should have the function of automatic adjustment of output power, which can improve the adaptability of power supply and load. Some induction cookers don't have this function. When the power supply voltage rises, the output power rises sharply. When the power supply voltage drops, the power is obviously reduced, which will bring inconvenience to users and affect the cooking quality.

2. Reliability and effective life. The reliability index of induction cooker is generally expressed by MTBF (mean time between failures), and the unit is "hours". 3. Appearance and structure. Ceramic glass is the best choice for the furnace plate, while tempered glass is a little worse.

4. Temperature control characteristics of the bottom of the pot. The heat from the bottom of the pot is directly transferred to the furnace plate (ceramic glass), which is made of heat-conducting material, so a heat-sensitive element is generally installed at the bottom of the furnace plate to detect the temperature of the pot bottom.

First, the power cord should meet the requirements. Because of the high power of the induction cooker, when configuring the power cord, the copper core wire that can withstand the current of 15A should be selected, and the matching sockets, plugs and switches should also meet this requirement. Otherwise, when the induction cooker works, the heavy current will heat up or burn out the wires and sockets. In addition, if possible, it is best to install a fuse box at the power cord socket to ensure safety.

Second, put it flat. The desktop where the induction cooker is placed should be flat, especially when eating hot pot on the dining table. If the countertop is uneven and one foot of the induction cooker is suspended, the gravity of the cooker will force the furnace body to deform or even damage. In addition, if the desktop is tilted, when the cooker is heated by the induction cooker, the microseismic shock generated by the cooker is also easy to make the cooker slip out, causing danger.

Third, ensure smooth pores. The working induction cooker heats up with the heating of the pot. Therefore. When placing an induction cooker in the kitchen, make sure that there is no object blocking the air inlet and exhaust holes of the furnace body. Do not pad (pile) objects and liquids on the side and bottom of the furnace that may damage the induction cooker. Fourth, the pot should not be too heavy. Induction cookers are different from stoves made of brick or iron, and have limited bearing capacity. Generally, the food in the cooker should not exceed 5 kg, and the bottom of the pot should not be too small, so that the pressure on the surface of the cooker will not be too heavy and concentrated. In case you need to heat an overweight and oversized pot, provide a separate support frame for the pot, and then insert the induction cooker into the bottom of the pot.

Five, clean the stove. Induction cookers, like other electrical appliances, should be waterproof and moisture-proof and avoid contact with harmful liquids. Do not put the induction cooker into water for cleaning and direct washing with water, and do not use solvent or gasoline to clean the furnace surface or furnace body. In addition, do not use metal brushes, emery cloth and other hard tools to wipe the oil stains on the furnace surface. To remove dirt, you can wipe it off with a soft cloth dipped in water. If it is oily, you can wipe it with a soft cloth dipped in a little low-concentration washing powder water. Do not use cold water to wipe the surface of the furnace in use or just finished. In order to avoid oil stains on the surface of the stove or the furnace body and reduce the workload of cleaning the induction cooker, when using the induction cooker, a piece of paper slightly larger than the surface of the stove, such as waste newspaper, can be placed on the surface of the stove to absorb water, oil and other pollutants that jump and overflow from the stove, and the paper can be discarded after use.

Six, detection furnace protection function should be in good condition. The induction cooker has good automatic detection and self-protection functions. It can detect whether the furnace surface appliances (whether they are metal bottoms), whether they are used properly, whether the furnace temperature is too high, etc. If these functions of the induction cooker are lost, it is very dangerous to use the induction cooker.

7. Press the button lightly and simply. The button of the induction cooker is light touch. When using, don't use your fingers too hard, just touch them gently. When the pressed button is activated, keep your fingers away, and don't press it to avoid damaging the reed and conductive contacts.
